While You Were Out

I mentioned last week that I was going to be taking two weeks off from A Cooking Show with Rachel O and the menus. But, I don’t want to leave you hanging. Since October is National Pizza Month, I thought I’d give you a week of pizzas, and re-run my pizza episode from almost a year ago. It’s a good one! I really love that pizza… OK, I just really love pizza. 🙂

A Week of Pizza

On Monday, if you happen upon some broccoli, you could make my Roasted Broccoli and Garlic Pizza (please do, it’s good!).

On Tuesday, if you have a plethora of butternut squash, try my Fancy Pizza with Roasted Butternut Squash and Bacon.

On Wednesday, if you still have some tomatoes and basil, and don’t have a pizza crust, try my Baguette Margherita Pizza.

On Thursday, if you have apples, try my BBQ Apple Bacon Pizza.

On Friday, if you want something simple, that tastes like a million bucks, try my Poor Man’s Roosevelt.

On Saturday, if you have some kale and leftover roasted chicken, try my Chicken Club Pizza.

And on Sunday, if you have some leeks, maybe some bell peppers left, and some leftover roast beef, you could make my Philly Cheesesteak Pizza.

If you want to make up your favorite dough, there are many recipe options. I’ve had a few favorites over the years. One was from The Pioneer Woman, another was from My Recipes, and my current favorite is from a cookbook called The Silver Spoon. I also have my adaptation.

We usually have Pizza Fridays, but I’m a believer in any night being a perfect night for pizza!

Picnics and Holidays

It’s the time of year to be outside (she says from her computer, at her desk, indoors). Eating food outside is fun and relaxing. Whether it’s in celebration of your nation, or just because you feel like a picnic. Grab a blanket, a basket, some delicious treats, a book, your dog, a loved one or two or three, and go outside!

It can be a tasty and creative way to use leftovers! For example, you could take some leftover Roast Pork, Roasted Chicken, or Roast Beef and make it into a sandwich (I did this last week, with the pork I’d made on the show, for Husband, and he loved it). You could just make a simple sandwich of pork, cheese, lettuce, mayo, and dijon, or you could sub the pork, chicken, or roast beef for the salami in my Italian Date Subs.

You could roast a chicken and use it in a salad, like Arlene did.

You could make a double batch of ground beef/beans and use one batch in tacos, and save the rest for Taco Salad (I’d add the chips right before serving, personally).

You could cook some salmon for dinner and use the leftovers to make a yummy Honey-Sesame Salmon Salad.

If you don’t have any leftovers to use up, you could make some Bacon and Egg Burgers or Hawaiian Sliders.

You could make a Bacon and Egg Roasted Potato Salad (recipe is below), or my Mom’s Potato Salad to go along with the burgers (or whatever you’re grilling – Sausages, Hot Dogs, Chicken, Steak…mmmm steak).

If you need more ideas, I’ve got plenty on this week’s menu. I’m also going to make a fresh veggie salsa on my 30th episode of A Cooking Show with Rachel O. We’ll bring it to the BBQ we’re going to on the 4th.  (Oh, and FYInformation, as always with my celebratory episodes, which tend to be the ones that end in “0”, there will be bloopers!)

Bacon and Egg Roasted Potato Salad

Bacon and Egg Roasted Potato Salad
Recipe Type: Salad

Prep time: 20 mins
Cook time: 50 mins
Total time: 1 hour 10 mins
Serves: 12-15
Potatoes and green beans are roasted and turned into a creamy potato salad.
Ingredients
  • 50-60 small red potatoes, cut in small chunks
  • 1 t salt
  • 1/2 lb. bacon, cooked and crumbled
  • 1 1/2 – 2 C green beans, cut in 1-2 inch pieces
  • 4 hardboiled eggs, chopped
  • 2 T olive oil
  • Dressing: 1 T dijon mustard
  • 1/2 C mayo
  • 1 T apple cider vinegar
  • 1/2 T honey
  • 1/2 C Greek yogurt
  • 1 t sweet paprika
  • 1 t salt
  • 1/2 t pepper
Instructions
  1. Toss potatoes with 3/4 t salt, and 1 1/2 T olive oil. On two baking sheets, roast at 350F for 15 minutes, flip potatoes and rotate baking sheets, bake 25-35 minutes more (or until potatoes are crispy outside and tender inside).
  2. Toss beans with remaining oil, and 1/4 t salt. Bake at 350F for 10-20 minutes.
  3. While potatoes and beans cook: Cook bacon. Drain on a paper towel lined plate. Whisk dressing ingredients together.
  4. Toss potatoes, beans, eggs, and dressing together. Toss with bacon right before serving.

Our Oscars Menu

We love the Academy Awards. We watched with a couple friends, and made so much yummy food. Whether it’s just the two of us watching, a few of us, or many, we make a lot. And, everything goes with a movie.

Some Italian movie that I don’t remember the name of

“Hawaiian Sliders”

The Descendants

The Hawaiian Sliders and the Protein Ladies were the most fun to make. I’m trying out some organic beef from TX Bar Organics, and we did a blind taste test with the crostini, comparing some made with conventional beef, others with organic, and just tasted the sliders to see if we liked them. We did. And, in the taste test, the organic beef won. Even the vegetarian agreed! (She ate it by choice, she was not forced!)

The sliders were simple to make, and really yummy. I’ll share my recipe with you, so you can make them for your next event, or just for dinner tonight!

Hawaiian Sliders

Hawaiian Sliders

Serves: 6
A bit of sweet, a bit of meat, makes a nice tasty treat.
Ingredients
  • 1/2 lb ground beef (I used organic)
  • to taste, Tropical Pepper Sea Salt
  • 1 t lemon juice
  • drizzle olive oil (I used Bari Organic Olive Oil)
  • 1-2 leeks, cut into rounds (and washed)
  • 4 slices pineapple, cut into thirds
  • 2 T honey
  • 1 C pineapple juice
  • 6 Hawaiian sweet rolls, halved
  • dijon mustard, for serving
Instructions
  1. Over medium heat, cook leeks with honey. Once they start to caramelize, add pineapple to one side of the pan. Flip pineapple once, when it starts to caramelize on one side. When the other side is caramelized, remove from pan.
  2. Add pineapple juice to leeks. Turn heat to med-high, and reduce until it’s all absorbed.
  3. Mix beef, salt, lemon juice and olive oil.
  4. Heat pan, add a drizzle of olive oil. When it’s hot, add burgers. Cook over med-heat, about 5 minutes. Flip, cover, cook about 5 minutes more, or until internal temperature reaches 160F.
  5. Serve each slider on a Hawaiian roll, topped with two pineapple slices, a spoonful of leeks, and a bit of Dijon mustard.

 

(I can’t believe I don’t have a photo of these… Actually, I can. We ate them as soon as they came out of the pan. Sorry. You’ll have to make them for yourself to see what they look like! :))

Baseball Time!

October, as I’ve said, is just about my favorite of all the months. One of the reasons is it’s the baseball postseason. The ALCS starts today! We only get the free TV channels, so we watch whatever games are on FOX. But we’ll take what we can get. I don’t really have a plan for who to root for, since my team is out, and I’m not really following any of the teams in it closely. Mostly I just want to watch baseball.

One of the fun things about lots of baseball is I get to make lots of yummy baseball food. I suppose I’d be making a lot of it anyways, but it’s an excuse to plan extra special fun things. (If you don’t like baseball, feel free to insert another thing you like to watch, like “Football”, “Basketball”, “Ballroom Dancing” (two words), “The Office”, “Jaws”, “Princess Bride”… you get the idea.)

Traditional baseball foods include: hotdogs, nachos, ice cream, wings, beer, popcorn. To play on and play up some of those ideas, here is my post season menu (or insert chosen watched activity here) (there is the possibility of 14 games, at least that we get on our TV):

1. Smothered Chicken Sandwiches (toasted garlic bread, chicken, gravy, parmesan cheese). Or Honey Mustard Chicken Sandwiches.

2. Burgers and Homemade Fries.

3. Nachos, Guacamole, Bean Dip.

4. Philly Cheesesteak Pizza (or sandwiches, or both).

5. Italian Sub Sandwiches with Homemade Potato Chips (or Salt and Vinegar kettle cooked chips).

6. Spinach-Artichoke Dip, Crostini, Popcorn with Parmesan, Peanut Butter Popcorn.

7. Hot Dogs (one of the only things on my list that won’t be in any way homemade :)).

8. Fancy Grilled Cheese (maybe with some apple, or basil in it).

9. Mac and Cheese.

10. Texas Stuff.

11. BLTs or BLT Pizza.

12. Crock Pot Chicken Drumsticks and Twice Baked Potatoes.

13. Meatball Subs and Shoestring Fries.

14. Chili and Cornbread.

Other ideas: Wings, Garlic Bread, Stuffed Peppers (mini or regular), Quesadillas, Wraps, Taco Soup…
