Sheet Pan Chicken Dinner – A Cooking Show with Rachel O – Ep. 3

This is going to be easy. Like, not as easy as making toast from store bought, pre-sliced bread. But, not as difficult as making toast from homemade bread. More like making toast from store bought not sliced bread.

The only difficult thing is waiting for the oven to heat up (ours takes twelve years) and making sure the chicken isn’t still frozen (ugh, mine is).

So while I wait for both of those things to correct themselves, I’m gonna halve some brussels sprouts and think about whether or not I could write a cookbook.

It’s something I’ve wanted to do for a while now. Just recently it’s been on my mind a little more. I was talking to Maggie Green about it last week and she asked “Why not you?” Yeah, why not me?!

So I’m putting this out there. Not for any reason but to tell you, so you can know first. “I’m gonna do the thing that scares me. Let my dreams be big enough to scare me.” –Arielle Estoria (paraphrase)

Ok, I think the oven’s ready. Remember, this is easy. You can swap out the veggies if you want to. I’m using brussels sprouts and broccoli, because it’s what I have on hand. I’d also like to make it with cauliflower, carrots, or even just a simple chicken and potatoes dinner. You could try rutabagas or parsnips, beets (chioggia beets would be super pretty), maybe even some cabbage wedges?? You’re the boss of your dinner, so make it how you want, use what you have on hand, and use this recipe as a guide, not something you have to follow exactly.

Since I’m the boss of my dinner, I’m using one of my favorite things: Sir Kensington’s Pepperoncini Italian Vinaigrette AND giving it away!! Winner winner chicken dinner!

Sheet Pan Chicken Dinner

Serves 4-6 (with leftovers)

Ingredients

Directions

  1. Pre-heat the oven to 350°F.
  2. Using two baking sheets, toss the chicken and all veggies in 1 cup of Sir Kensington’s dressing. Spread everything out evenly. It’s good if it touches. I like to keep the chicken skin side up, keeping the bottom in contact with the baking sheet. Bake, turning sheets once and stirring the veggies, until the chicken is fully cooked and the veggies are tender inside and browned and crispy outside, about 50-60 minutes (depending on your oven).
  3. While everything roasts, whisk together the remaining vinaigrette and the mayo to make a sauce.
  4. Top veggies with Maldon salt. Serve the veggies and chicken with the sauce poured overtop or on the side for dipping.

There are lots of things that I love to do. One of my favorites is coming up with new recipes. Some are my variation of a classic – I obviously didn’t invent Chicken Pot Pie. But, some are my own creations.

I’m pretty good at paring foods. I trust my judgement when it comes to knowing if flavors will complement each other. But, having The Flavor Bible at my side has allowed me to combine things I didn’t know were a match. It’s broadened my horizons. It’s opened my eyes to so many amazing culinary opportunities.

For example, I wouldn’t have known that adding tarragon would make my Chard Wraps with Beef and Tarragon so delicious. Or, that beets, bacon, mache, oranges, apples, and pistachios would make a fabulous Mache and Citrus Salad. I would have missed out on all the amazing ways to use fennel pollen, a seasoning I’ve recently been introduced to. I wouldn’t have known that it goes well with fish, carrots, garlic, potatoes, and lemon, which would have meant no Mahi Mahi, Fennel, and Potato Chowder. And who can forget those little Red Cabbage and Apple Tarts that were made to be eaten with the Wowza Steak Salad?! I haven’t.

I’ve told you over and over again how much I love this book. I take photos of it when I use it. I’m so excited about how wonderful it is.

I just can’t help myself.

Chicken Caesar Salad with Fava Beans – Episode 22

The episode is a shorter one. Filming on my birthday meant working just a half day. I took part of the afternoon off, was spoiled by Tim, and went out with some really good friends to a local French restaurant. It was delicious! I had Steak with a Red Wine Sauce, Garlic Mashed Potatoes, and Asparagus. For dessert I had Crème Brûlée. Wish I could have that again for dinner tonight!

Back to the episode… It features Fava Beans in a Chicken Caesar Salad. Um, yes please! It’s a simple salad that is great lunch or dinner, as a side or a main dish… Tim didn’t even complain that we were just having salad as a meal. ¯\_(ツ)_/¯ I still have some lemons left from a few weeks ago, so I used those in the dressing, as well as some yummy garlic, dijon mustard, parmesan cheese, and Bari Organic Olive Oil. I used the lettuce that was in this week’s AHO box, and topped our salad with a few roasted and salted almonds, and some homemade croutons.

I love the addition of fava beans in the salad. They add protein, fiber, vitamins A and C, potassium, and iron. You could omit the chicken if you wanted to have a vegetarian salad. Either way, I think it will be delicious.

Chicken Caesar Salad… With Fava Beans

Chicken Caesar Salad… With Fava Beans

Serves: 2-4
Chicken Caesar Salad gets a boost with healthy fava beans!
Ingredients
  • 1 head lettuce, washed and torn
  • 1 C chicken, cooked and shredded (I used leftovers)
  • 1/2 C fava beans, blanched and shelled
  • Options for toppings: chopped almonds, 1/2 C croutons, parmesan cheese, bacon
  • caesar salad dressing
Instructions
  1. Bring a pot of water to a boil.
  2. Snap tip of fava bean and pull down using the string. Remove beans from inside. Boil beans for 30 seconds. Remove from pot and immediately plunge in an ice bath (bowl of cold water with ice in it) to stop the cooking process.
  3. Gently peel the tip, and squeeze the bean out.
  4. Prepare dressing.
  5. Assemble and toss salad with dressing.

Caesar Salad Dressing
Recipe Type: Condiment
Prep time: 5 mins
Total time: 5 mins
Ingredients
  • 2-3 T lemon juice
  • 5 T mayo
  • 1 T dijon mustard
  • 10 T olive oil
  • 1/2 t salt
  • 1/2 C parmesan
  • pepper
  • 1 clove garlic, minced
Instructions
  1. Whisk all ingredients except oil together.
  2. Slowly drizzle oil in, whisking as you do.

  • 1 C cubed bread
  • 1 T olive oil
  • salt
  • pepper
Instructions
  1. Toss cubed bread with oil, salt, and pepper.
  2. Broil 5 minutes in toaster oven, flip, and broil 2 minutes more.
  3. Let sit 5 minutes.
