Anybody Have Any Extra Inspiration?

Ever have one of those days where you’re just not inspired? Today is that day for me. There’s nothing wrong, nothing’s missing, I’m just feeling tired and unmotivated. It’s actually not been a bad day at all. I took the morning to do domestic things (water the garden, vacuum, brush our shedding dog… if you look at the word “shedding” quickly, it looks like I wrote “sledding dog”… that made me giggle to think about Dog on a sled, he would hate it, he would jump off it instantly…). It was nice to decide that I wasn’t going to start work until this afternoon, so I could feel like I didn’t have to rush through things. Husband came home for lunch, we ate quesadillas with cheese and sliced peaches, dipped in Greek yogurt and peach salsa. We watched The Office while we ate. It was nice.

I have a few go-to meals when I’ve forgotten to plan, or have neglected to take something out of the freezer the night before, or forgotten to buy the ingredients I need. One of them, which we had today, is Quesadillas. Another is Grilled Cheese. And there’s always Mac and Cheese. I think it helps to have easy meals for when the plan falls through. Because, let’s face it, it’s gonna happen every once in a while.

One thing that I love about Grilled Cheese, Quesadillas, and Mac and Cheese is that they can be dressed up and fancied, or left original and delicious.

You could make Grilled Cheese into Nutella, Bacon, and Strawberry Grilled Cheese (not sure about it – try it, it’s good), or add basil and tomato then cook, or add basil, tomato, and mayo after it’s cooked for a hot and cold crunch!

You could add a Spaghetti-ish twist to Mac and Cheese to make Spaghetteroni and Cheese, or add some veggies (broccoli, peas, squash, cauliflower, onion, garlic, spinach, kale…) and add a little extra punch of nutrition to regular M&C. And, while you’re at it, try some whole wheat, or rice penne, or rotini pasta!

Today I had peaches that needed to be used, so I sliced them up and added them to the cheese (depending on what’s in season, you could also use apples, pears, plums, apricots, pluots, apriums…). Sometimes I’ll do black beans, corn, salsa, summer squash, and cheese. You could do Garbonzo Bean Quesadillas, Chicken Quesadillas, Bacon, Cheddar, and Black Bean Quesadillas. You could do a BLT Quesadilla (try kale instead of lettuce as the “T”).

Of all the quesadillas that I’ve made, the one that Husband cheered for the most was my Santa Fe Quesadillas. I’m not sure why I named them that. It just seemed to fit. Tweak them, add your favorite ingredients, make them your own! A great go-to meal that’s perfect for lunch or dinner!

Santa Fe Quesadillas

Santa Fe Quesadillas
Recipe Type: Main

Total time: 11 mins
Serves: 2
Ingredients
  • 1/2 C corn
  • 1/2 C black beans
  • 1/4 C onion, chopped
  • 1 clove garlic, grated
  • 2 leaves swiss chard (or kale or spinach), chopped
  • 4 cherry tomatoes, chopped
  • 1/4 to 1/2 C parmesan cheese, grated
  • 1/4 to 1/2 C mozzarella cheese, grated
  • 1 t chili powder
  • 1/2 t cumin
  • salt
  • pepper
  • 1/4 t oregano
  • 2 tortillas
Instructions
  1. Mix all ingredients together (except tortillas).
  2. Heat pan. Place tortilla in pan, spread half the tortilla with half the filling, and fold over with the other half. Repeat with second tortilla.
  3. Cook over medium heat until crispy, flip carefully, cook until cheese is melted and it’s as crispy as you want it.
Notes

You could put less filling in each and make 4 smaller quesadillas.

Sarah’s Yummy Salmon

I have known Sarah for about a year. In that time, we’ve shared many meals and good times together. Often they take place at one of our homes, and the guests get to bring something to go along with the meal. I must say that between the two of us, we’ve come up with some really great dinners! I’m so thankful for my new(ish) friend!!

Growing up the only cooking I did was when I was babysitting which means I had a Masters in Mac ‘n Cheese and take & bake pizza.  After college I had an apartment with a roommate, but neither of us saw the point in cooking for one (since we cooked separately) so we unfortunately continued to stay proficient in “bachelor pad” type food.  I dabbled every once in awhile on dinner guests, but nothing beyond basic.  Then I met a boy who I vowed I would do anything to get him to keep him around.  I had no idea what that would require.  One Saturday afternoon I invited him over for dinner.  I then proceeded with the question, “What are you hungry for?”  Now – I have since been told Ishould have said, “Would you like OPTION A, OPTION B, or OPTION C for dinner?”  With a completely seriously straight face my handsome boyfriend said, “Chicken Cordon Bleu.”  Oh boy.  I swallowed and then began googling.  This was my official initiation into cooking.  It turned out tasty and my confidence came alive.  Now please do not go blog searching for me and my cooking site because you will be sorely disappointed.  I am no amazing cook.  I only know how to read a recipe and get creative here and there with spices…look out!

I enjoy cooking and have a great appreciation for those who have mastered it.  I may not be the next Julia Child, but I do give myself the occasional challenge such as buying a meat I have never cooked before and finding a recipe including it.  I’m hoping when my kids are grown they will not remember having the same 4 rotating dinner dishes, but a nice array of palate pleasers that cultured them and taught them to appreciate good food.

One of the favorite dinner requests at my house is HONEY SOY SALMON.  It’s quick and super tasty.  My husband loves soy sauce so anything that has a hint of it plus a mound of white rice on the side could cure any bad day in his book.  Give it a try – you will not be disappointed!

(For the hopeless romantic reader – that handsome boyfriend eventually asked me to marry him. :))

Sarah’s Honey Soy Salmon

Honey Soy Salmon
Recipe Type: Main, Fish, Dinner

Ingredients
  • 1 Scallion minced
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Honey
  • 1 lb Salmon
  • 1 tsp Sesame Seeds
Instructions
  1. Wisk scallion, soy sauce, rice vinegar, & honey together.
  2. Place the salmon in a Ziplock along with 3 Tbsp of the liquid mix. Place in the refrigerator for at least 15 minutes to chill.
  3. Preheat broiler & line a small pan with foil and cooking spray.
  4. Place salmon skin side down on foil. Broil for 6-10 minutes.
  5. Drizzle remaining sauce when removed from broiler & garnish with sesame seeds.

What’s Goin’ On

Welllll, hello! Happy Monday to you! I hope you had a wonderful weekend!

We did! Husband and I went to see his mom, since his dad was out of town, and we didn’t want her to be alone on Mother’s Day! We had such a nice time. We did things like pedicures (Mom and I, Husband refused to join us), shopped, had a yummy Mother’s Day brunch (waffles by Husband, Frittata, Fruit Salad, Strawberry Sauce by me). (The Frittata that I made was basically the Mushroom Frittata that I posted a while ago, with a few different veggies: asparagus, red bell pepper, and with feta cheese instead of cheddar and parmesan, topped with some really ripe avocado wedges.) It was nice to get away for a couple days.

Strawberry Sauce

Strawberry Sauce
Recipe Type: Sauce

Ripe strawberries make for a delicious sauce!
Ingredients
  • 2 C strawberries, chopped, halved, or whole
  • 2 T water
  • 1 t cinnamon
  • dash/tiny tiny smidge salt
  • 1 T honey
  • 1/4 C water
  • 1 T cornstarch
Instructions
  1. Add first 5 ingredients in a small sauce pan. Bring to a boil, and cook over medium heat until strawberries are soft. (During cooking, mash strawberries slightly, or leave whole.)
  2. Whisk 1/4 C water and cornstarch together. Add to strawberry mixture. Let thicken.
  3. Serve and enjoy!

 

How was your Mother’s Day?

I’m not a mom, but I have such love and respect for those who are. I know this isn’t the same thing, but I have spent a good deal of time caring for some special little ones (I miss you, Bugaboo and Liam!!), and I have a small taste for the amount of work that goes into child-rearing. Those little friends sure are precious! (Side note: We got to see our small friends yesterday. Liam, age 5, ran up to me and didn’t say hi, he just yelled, “I LOVE YOUR COOKING SHOW!!” Made me feel so special!!)

My birthday week is over, but there’s still time to enter to win Joy the Baker‘s cookbook (it’s going to be signed!!), and a box of Abundant Harvest Organics produce. The cookbook giveaway ends May 15th 9am (PST), and AHO giveaway ends May 16th pam (PST).

I had such a wonderful birthday! Part of the reason was because I received birthday greetings from so many people. Yes, many were entries to the contests. But, I don’t mind. It was just fun to hear from you! Another reason it was great was I got some fun gifts (like a Red Sox hat, some homemade Cinnamon Swirl Bread, a gift certificate to Olive & Thyme, a subscription to Joy the Baker’s Enjoy!… just to name a few), not that it’s all about the gifts. But, they were given, and I appreciate them! And, I got to celebrate a few different times, one of them was at a French restaurant with lots of friends.

Now that we’re back, and I’ve finally unpacked and gotten my brain uncluttered (somewhat), I’m thinking about this week and all that it has in store.

Chicken Caesar Salad with Fava Beans – Episode 22

The episode is a shorter one. Filming on my birthday meant working just a half day. I took part of the afternoon off, was spoiled by Tim, and went out with some really good friends to a local French restaurant. It was delicious! I had Steak with a Red Wine Sauce, Garlic Mashed Potatoes, and Asparagus. For dessert I had Crème Brûlée. Wish I could have that again for dinner tonight!

Back to the episode… It features Fava Beans in a Chicken Caesar Salad. Um, yes please! It’s a simple salad that is great lunch or dinner, as a side or a main dish… Tim didn’t even complain that we were just having salad as a meal. ¯\_(ツ)_/¯ I still have some lemons left from a few weeks ago, so I used those in the dressing, as well as some yummy garlic, dijon mustard, parmesan cheese, and Bari Organic Olive Oil. I used the lettuce that was in this week’s AHO box, and topped our salad with a few roasted and salted almonds, and some homemade croutons.

I love the addition of fava beans in the salad. They add protein, fiber, vitamins A and C, potassium, and iron. You could omit the chicken if you wanted to have a vegetarian salad. Either way, I think it will be delicious.

Chicken Caesar Salad… With Fava Beans

Chicken Caesar Salad… With Fava Beans

Serves: 2-4
Chicken Caesar Salad gets a boost with healthy fava beans!
Ingredients
  • 1 head lettuce, washed and torn
  • 1 C chicken, cooked and shredded (I used leftovers)
  • 1/2 C fava beans, blanched and shelled
  • Options for toppings: chopped almonds, 1/2 C croutons, parmesan cheese, bacon
  • caesar salad dressing
Instructions
  1. Bring a pot of water to a boil.
  2. Snap tip of fava bean and pull down using the string. Remove beans from inside. Boil beans for 30 seconds. Remove from pot and immediately plunge in an ice bath (bowl of cold water with ice in it) to stop the cooking process.
  3. Gently peel the tip, and squeeze the bean out.
  4. Prepare dressing.
  5. Assemble and toss salad with dressing.

Caesar Salad Dressing
Recipe Type: Condiment
Prep time: 5 mins
Total time: 5 mins
Ingredients
  • 2-3 T lemon juice
  • 5 T mayo
  • 1 T dijon mustard
  • 10 T olive oil
  • 1/2 t salt
  • 1/2 C parmesan
  • pepper
  • 1 clove garlic, minced
Instructions
  1. Whisk all ingredients except oil together.
  2. Slowly drizzle oil in, whisking as you do.

 

Homemade Croutons

  • 1 C cubed bread
  • 1 T olive oil
  • salt
  • pepper
Instructions
  1. Toss cubed bread with oil, salt, and pepper.
  2. Broil 5 minutes in toaster oven, flip, and broil 2 minutes more.
  3. Let sit 5 minutes.
