What’s Goin’ On

Welllll, hello! Happy Monday to you! I hope you had a wonderful weekend!

We did! Husband and I went to see his mom, since his dad was out of town, and we didn’t want her to be alone on Mother’s Day! We had such a nice time. We did things like pedicures (Mom and I, Husband refused to join us), shopped, had a yummy Mother’s Day brunch (waffles by Husband, Frittata, Fruit Salad, Strawberry Sauce by me). (The Frittata that I made was basically the Mushroom Frittata that I posted a while ago, with a few different veggies: asparagus, red bell pepper, and with feta cheese instead of cheddar and parmesan, topped with some really ripe avocado wedges.) It was nice to get away for a couple days.

Strawberry Sauce

Ripe strawberries make for a delicious sauce!
Ingredients
  • 2 C strawberries, chopped, halved, or whole
  • 2 T water
  • 1 t cinnamon
  • dash/tiny tiny smidge salt
  • 1 T honey
  • 1/4 C water
  • 1 T cornstarch
Instructions
  1. Add first 5 ingredients in a small sauce pan. Bring to a boil, and cook over medium heat until strawberries are soft. (During cooking, mash strawberries slightly, or leave whole.)
  2. Whisk 1/4 C water and cornstarch together. Add to strawberry mixture. Let thicken.
  3. Serve and enjoy!

 

How was your Mother’s Day?

I’m not a mom, but I have such love and respect for those who are. I know this isn’t the same thing, but I have spent a good deal of time caring for some special little ones (I miss you, Bugaboo and Liam!!), and I have a small taste for the amount of work that goes into child-rearing. Those little friends sure are precious! (Side note: We got to see our small friends yesterday. Liam, age 5, ran up to me and didn’t say hi, he just yelled, “I LOVE YOUR COOKING SHOW!!” Made me feel so special!!)

My birthday week is over, but there’s still time to enter to win Joy the Baker‘s cookbook (it’s going to be signed!!), and a box of Abundant Harvest Organics produce. The cookbook giveaway ends May 15th 9am (PST), and AHO giveaway ends May 16th pam (PST).

I had such a wonderful birthday! Part of the reason was because I received birthday greetings from so many people. Yes, many were entries to the contests. But, I don’t mind. It was just fun to hear from you! Another reason it was great was I got some fun gifts (like a Red Sox hat, some homemade Cinnamon Swirl Bread, a gift certificate to Olive & Thyme, a subscription to Joy the Baker’s Enjoy!… just to name a few), not that it’s all about the gifts. But, they were given, and I appreciate them! And, I got to celebrate a few different times, one of them was at a French restaurant with lots of friends.

Now that we’re back, and I’ve finally unpacked and gotten my brain uncluttered (somewhat), I’m thinking about this week and all that it has in store.
