Roasted Turnips with Bacon – Episode 29

For this week’s episode, I wanted to use turnips. I also wanted to use some more of the pork I was given by Llano Seco Organic Pork. So I did.

First of all, turnips – cute, little, kinda spicy. I roasted them, which kinda mellows their flavor. I paired them with bacon. Win, win. I heart bacon. Big time. Usually when I cook bacon I make the whole package so I can eat all the leftovers freeze the leftovers to use in other meals. Secondly, let’s get back to the meat for a second. Have you tried anything from Llano Seco? They have a few items available on the add-ons list from Abundant Harvest Organics, like sausage (that I used in last week’s episode – guys, this stuff is YUMMY!), bacon, and ham! I’ve tried them all. THEY. ARE. GREAT!! I’ve seen on Facebook that you can find them at the Chico and Fort Mason markets. It would be worth a visit.

With the leftovers from this dish, you could make: Pork Tacos (easy – taco shells, cheese, lettuce, tomato, salsa, yogurt/sour cream, pork… GO!), Salad (peaches or nectarines, lettuce, almonds, pork, raisins, dressing), Pulled Pork Sandwiches, Pulled Pork Pizza, Sandwich (sliced pork, lettuce, Gruyère, dijon, mayo, bread – Tim had this for lunch today and he sent me a text saying how amazing it was – I love hearing that).

Another fun thing in this episode: I used my new hand blender from KitchenAid to grind the almonds. I’m so excited about this blender! I’ve used it a few times now, and am working on a review of it, but I just wanted to mention to you that I’m trying out this wonderful new product. I’ll tell you more about it at another time. I can’t wait!

Roasted Turnips with Bacon

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 1-2

Roasted Turnips with Bacon

Ingredients

  • 1 T unsalted butter, melted
  • 1 T honey
  • 1/2 t salt
  • 1/2 t pepper
  • 3-4 small turnips, chopped in 8-10 pieces
  • 2 slices bacon, cooked and crumbled

Instructions

  1. Pre-heat oven to 350F.
  2. Cook bacon. Remove with slotted spoon and set on a paper towel lined plate to drain. Crumble when cool.
  3. Whisk butter, salt, and pepper together. Toss with turnips.
  4. Place turnips on baking sheet and roast for 15-20 minutes.
  5. Remove from oven and toss with honey. Bake an additional 15-20 minutes, or until turnips are crispy outside, tender inside. (Keep an eye on them so honey doesn't burn.)
  6. Toss with bacon and serve.

Almond and Black Pepper Crusted Roast Pork

Prep Time: 20 minutes

Cook Time: 2 hours, 30 minutes

Total Time: 2 hours, 50 minutes

Yield: 4-8

Ingredients

  • 1 pork leg, trimmed of fat
  • 2 T unsalted butter, softened (at room temperature is perfect)
  • 2 T honey
  • 3 T almonds, ground
  • 1/2 to 1 T freshly ground black pepper
  • 1 t salt
  • 1 C water

Instructions

  1. Pre-heat oven to 275F.
  2. Combine butter through salt in a small bowl. Rub over both sides of pork.
  3. Place pork in a greased oven-proof dish. Pour water around pork. Cover with foil.
  4. Bake for 2 hours (or until internal temperature reaches at least 165F). Remove foil. Increase temperature of oven to 350F. Bake 30 minutes more.
  5. Tent with foil and let rest 15-30 minutes or so before slicing.

BBQ Apple Bacon Pizza

BBQ Apple Bacon Pizza

Total time: 25 mins
Serves: 2-3
Another successful Pizza Fridays invention. We loved this one!
Ingredients
  • 1 pizza crust
  • 1 small apple, thinly sliced
  • 2 slices bacon, chopped and cooked
  • 1/4 C BBQ sauce (I used homemade)
  • salt and pepper, to taste
  • 1/4 t sweet paprika
  • 1/4 – 1/2t red pepper flakes
  • drizzle honey
  • 1C cheese (extra sharp cheddar, parmesan)
  • 1T flour
Instructions
  1. Cook bacon, drain on paper towel.
  2. Sprinkle pizza pan with flour. Roll or press out dough, working from center and moving out, spinning the pan as you go.
  3. Top with BBQ sauce, cheese, apple, bacon, spices, drizzle honey, and a bit more cheese.
  4. Bake according to pizza crust directions (or 375F for 15-18 minutes).
  5. Serve topped with more parmesan (opt.).

Chicken Club Pizza

Ingredients
  • 1 pizza crust
  • 1C cheese, grated
  • 1 chicken breast, cooked and chopped
  • 3 slices bacon, crumbled
  • 1/2C tomato sauce
  • 6 small kale leaves, chopped
  • salt and pepper, to taste
  • 1t cornmeal or flour
  • 1t olive oil
  • 1/8C red onion
  • 1T green garlic
  • pinch garlic seasoning (opt)
  • 1t honey
  • 1 tomato on it – sliced
Instructions
  1. Cook bacon. Cook onions (in bacon pan, if desired or with 1t oil) with honey, caramelize; add garlic in last minute of cooking. Meanwhile, grease pizza pan, sprinkle cornmeal or flour in center of pan; spread dough out.
  2. Top with sauce, cheese, bacon, onions, garlic, chicken, tomato, kale, and a tiny bit more cheese.
  3. (Opt.) Put a smidge of oil around crust and sprinkle garlic seasoning on it.
  4. Bake according to pizza crust directions (or 375F for 15-18 minutes).
  5. Serve and enjoy!

Nutella, Bacon and Strawberry Grilled Cheese

Nutella, Bacon and Strawberry Grilled Cheese

Ingredients
  • Nutella
  • 6 slices Gruyere-Cheddar Melange (from Trader Joe’s), or just Gruyere
  • 6 slices New York Cheddar
  • 4 strawberries, sliced
  • 4 slices bread
  • 1/4 to 1/2 C chopped, cooked bacon
  • butter (or butter spread)
Instructions
  1. Spread bread with butter (outside sides). Spread inside of one slice (per sandwich) with Nutella – not too much, or it will be too sweet.
  2. Top Nutella side (in this order) with: Gruyere, strawberries, bacon and cheddar.
  3. Grill (using a cast iron skillet to press down if desired, or a panini press) until cheeses are melted and bread is crispy.
