Salmon with Garlic-Pistachio Cream Sauce

Salmon is topped with a rich and creamy pistachio sauce.
Ingredients
  • 2 salmon fillets
  • 1/2 C white wine
  • 1 T olive oil
  • Sauce: 1 T cream
  • 3/4 C milk
  • 2 T all purpose flour
  • 2 T garlic infused olive oil
  • 16 pistachios, roughly chopped
  • 1/4 to 1/2 t salt
  • pepper
Instructions
  1. Pre-heat oven to 350F. Grease a baking dish with 1 T olive oil. Add wine. Place salmon skin side up in wine. Cover dish with foil and bake at 350F for 30-40 minutes.
  2. Heat a skillet over medium heat. Add garlic infused olive oil. When hot, add flour and whisk in, making a roux. Cook for about 30 seconds. Turn heat to low. Add milk, 1/4 C at a time, whisking it and letting it thicken between additions. Remove from heat and add cream, pistachios, salt, and pepper.
  3. Serve over salmon, alongside Roasted Fennel Pollen Potatoes

Smoked Salmon Tea Sandwiches

Ingredients
  • 2 – 4oz. packages smoked salmon, finely chopped
  • 1 oz. capers, drained
  • 12oz. (1 1/2 pkgs) cream cheese
  • 14-16 slices white bread
Instructions
  1. Mix cream cheese until spreadable (if desired the cheese can be left at room temperature for a while to soften, then mixed).
  2. Mix salmon with capers and cream cheese. Spread on bread.
  3. Top with a second slice of bread.
  4. Cut in triangles, quarters, or fingers.
Notes

You could use leftovers to make a Savory Stuffed French Toast.
Makes 7-8 sandwiches total.

Battered and Fried Mahi Mahi

Battered and Fried Mahi Mahi

Ingredients
  • 1 package Mahi Mahi (about 1 lb.)
  • 1 C flour (or so)
  • 1 t paprika
  • salt
  • pepper
  • 1 egg
  • 3-4 C oil (I used canola)
Instructions
  1. Mix flour, paprika, salt, and pepper in a shallow dish. Whisk egg in a separate shallow dish.
  2. Heat oil in a deep dish.
  3. Coat fish in flour mixture, then in egg, then in flour mixture again. (Try to keep one hand as a the “dry” hand, the other as the “wet” one.) Set aside on a separate plate.
  4. When oil is hot (I stuck the end of a wooden spoon in – when it bubbled a bit around it, it was hot enough – don’t know if this is a real method, but it worked) carefully add fish, 2-3 pieces at a time (you don’t want to add too much and cool the oil down too much – this will result in slower cooking time, which means the fish will absorb more oil, resulting in greasier fish). Cook about 3-4 minutes, then flip, and cook 2-4 minutes more (I wanted the internal temperature to get to 165F).
  5. Remove from pan and drain on a paper towel lined plate.
  6. Repeat with remaining fish (it took me 3 batches with about 1 lb. of fish).

Salmon and Corn Salad

Salmon and Corn Salad

A great way to use amazing summer corn and leftover salmon!
Ingredients
  • 1 t olive oil
  • 1/4 C leftover salmon, cold
  • 1/4 to 1/2 C crispy potatoes (leftovers are fine and can be reheated in the toaster oven, or follow the recipe)
  • 1/4 C corn off the cob
  • 1/4 C green beans, chopped
  • 1/4 C zucchini, chopped
  • 1 egg, fried
  • 2 T almonds, chopped
  • 2 C lettuce
  • 1/2 C cornbread croutons
Instructions
  1. (If using leftover crispy potatoes, re-heat in the toaster oven. 350F until they’re hot.)
  2. Heat pan. Add oil. Slowly add egg (I like to pour it from a small bowl). Sprinkle with a dash of salt and pepper. Cook, covered, flipping if desired, until it reaches desired doneness.
  3. Top lettuce with potatoes, veggies, almonds, croutons, and salmon. Place egg on top. Drizzle with dressing.

Ingredients
  • 1 salmon fillet
  • 1 t olive oil
  • 1 T soy sauce
  • 2 T apple cider vinegar
  • 2 T red wine vinegar
  • 1/4 C water
  • salt
  • pepper
Instructions
  1. Grease oven-proof pan with oil.
  2. Place salmon in the pan.
  3. Combine remaining ingredients and pour over salmon.
  4. Bake at 350F for 30-45* minutes (or until internal temperature of salmon reaches 160F).
Notes

*I used the toaster oven, so it took 45 minutes. A conventional oven may be quicker.
