Spring Frittata

Spring Frittata

Using some of the first spring vegetables of the year, this Frittata is perfect for an outdoor brunch.
Ingredients
  • 1 T olive oil
  • 2 medium potatoes, chopped
  • 1/2 lb. mushrooms, quartered
  • 1/2 large leek, chopped
  • 1 stalk green garlic, chopped
  • 1 bunch (about 20) asparagus, ends trimmed, chopped
  • 1-2 T fresh parsley, rough chopped
  • 1/2 to 1 t salt
  • 1/8 t pepper
  • 1/2 C milk
  • 8 eggs
  • 1/2 C parmesan cheese, grated
Instructions
  1. Pre-heat oven to 375F.
  2. Heat ovenproof skillet. Add olive oil. Add potatoes and a pinch of salt and pepper. Cook covered, over medium-low or low heat for 20-25 minutes, stirring occasionally, until potatoes are tender.
  3. Add asparagus, leek, and mushrooms. Cook uncovered, over medium heat, stirring occasionally, for about 10 minutes, or until the veggies are tender.
  4. Add green garlic and cook 1 minute more.
  5. Whisk eggs with milk, salt, pepper, and parsley. Turn heat to medium-low and add eggs to pan. Stir once. Cook for 1 minute, stir again, then cook for 3-5 minutes, or until eggs are starting to set.
  6. Sprinkle with cheese and place in the oven for 15-20 minutes, or until the eggs are set.
  7. Remove from oven and let stand for 10 minutes before serving.

Eight Bean Soup

Eight Bean Soup

Eight different kinds of dried beans are soaked overnight, rinsed, then simmered for hours and hours on the stove. They make up this creamy soup and are complimented by flavors like lemon, balsamic vinegar, parsley, and garlic.
Ingredients
  • 1 T olive oil
  • 4 C dried 8 bean mixture, soaked overnight, and rinsed
  • 1 large shallot, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, diced
  • pepper, to taste
  • pinch cayenne
  • pinch ginger
  • 1 bay leaf
  • 3 T balsamic vinegar, divided
  • 4 C stock (chicken, veggie, or beef)
  • 4 C water
  • 4-6 C stock or water, as needed
  • 2-3 T lemon juice
  • 1/2 to 1 t salt
  • 1 T dried parsley
Instructions
  1. Heat soup pot. Add oil. Add shallot, carrot, garlic, and beans. Stir and cook 1 minute. Add pepper, ginger, cayenne, bay leaf, 1 1/2 T balsamic vinegar, 4 C stock, and 4 C water. Bring to a boil, then reduce heat to a simmer (medium-low heat) and cook for 4-5 hours, or until beans are tender. Check every 30 minutes, stirring and adding more liquid as needed, about 4-6 C in total.
  2. Add parsley, lemon juice, salt, and remaining balsamic vinegar. Cook 10 minutes. Taste and adjust seasoning and lemon juice as needed.
Notes
Delicious with Cornbread and a citrusy beer! For vegetarian or vegan, use a vegetable stock.

Chicken Cordon Bleu avec Moutarde

Chicken Cordon Bleu with a twist – mustard!
Ingredients
  • 6 chicken breasts
  • 6 slices of prosciutto
  • 12 slices of gruyère cheese
  • 2 T dijon mustard
  • salt
  • pepper
  • paprika
  • flour
  • 1/2 C parmesan cheese, grated
  • 1/2 to 1 C water
  • lemon juice
Instructions
  1. Pre-heat oven to 350F. Slice chicken almost all the way through, lengthwise, creating a flap. Stuff with 2 pieces of gruyère and 1 piece of prosciutto. Close flap and spread the top with dijon, a sprinkle of salt, pepper, paprika, and flour.
  2. Grease a 9×13 baking dish. Pour in water. Place chicken in pan, mustard side up.
  3. Bake for 45 minutes. Sprinkle with parmesan and bake 15-20 minutes more (or until chicken reaches 175F).
  4. Sprinkle with a bit of lemon juice and serve.

Crispy Dijon Chicken Thighs

Ingredients
  • 2 chicken thighs
  • 2 T butter
  • 1 T olive oil
  • 1 T dijon mustard, divided
  • 1-2 T flour
  • salt
  • pepper
Instructions
  1. Spread 1/4 T dijon over one side of each chicken thigh. Season it with salt and pepper. Sprinkle it with flour.
  2. Heat skillet. Add olive oil. When hot, shake excess flour from chicken and place in pan, mustard side down.
  3. Top each thigh with remaining mustard, salt, pepper, flour, and 1 T butter. Place lid on pan and cook over low heat for 8-10 minutes. Flip and cook 8-10 minutes more, or until chicken reaches 180F.
Notes
Serve with Hot Napa Slaw!

Salmon with Garlic-Pistachio Cream Sauce

Salmon is topped with a rich and creamy pistachio sauce.
Ingredients
  • 2 salmon fillets
  • 1/2 C white wine
  • 1 T olive oil
  • Sauce: 1 T cream
  • 3/4 C milk
  • 2 T all purpose flour
  • 2 T garlic infused olive oil
  • 16 pistachios, roughly chopped
  • 1/4 to 1/2 t salt
  • pepper
Instructions
  1. Pre-heat oven to 350F. Grease a baking dish with 1 T olive oil. Add wine. Place salmon skin side up in wine. Cover dish with foil and bake at 350F for 30-40 minutes.
  2. Heat a skillet over medium heat. Add garlic infused olive oil. When hot, add flour and whisk in, making a roux. Cook for about 30 seconds. Turn heat to low. Add milk, 1/4 C at a time, whisking it and letting it thicken between additions. Remove from heat and add cream, pistachios, salt, and pepper.
  3. Serve over salmon, alongside Roasted Fennel Pollen Potatoes
