Pulled Pork Sandwiches with Coleslaw – Episode 14

Hello!!! It’s time for another episode of A Cooking Show with Rachel O!! I made a Pulled Pork Sandwich with Coleslaw which = a tasty (really messy) sandwich! There’s also a special little feature – the winner of the Joy the Baker cookbook giveaway is revealed on the show!

I got some pork from one of my sponsors, Llano Seco Organic Pork, a couple of weeks ago. I roasted it last week, and have been trying to be creative with the leftovers (it’s the pork I used in last week’s episode as well). If you don’t have pork, you could totally substitute beef, chicken, or even grated veggies (like carrots, squash, parsnips, beets – veggies that aren’t going to turn into mush – just don’t cook them as long). The pork was combined with homemade BBQ sauce, green garlic, pea tendrils, and chard from my Abundant Harvest Organics box, and cooked for hours and hours! There’s cabbage and a grated carrot in the coleslaw, potatoes making the home fries.

Pulled Pork Sandwiches with Coleslaw

Pulled Pork meets Coleslaw.
Ingredients
  • 2 C BBQ sauce
  • 4-6 C water (enough to cover the pork)
  • 4-6 C pork (I used leftovers, in large slices) (chicken or beef could be substituted)
  • 1 T olive oil
  • 1 green garlic, chopped
  • 3-4 C greens (I used pea tendrils and chard, spinach/kale would also work well)
  • 1 roll, or 2 slices bread/serving (for sandwich)
  • 1 tomato, sliced (2 slices/serving) (for sandwich)
Instructions
  1. Drizzle Crock Pot with olive oil, pour a little water and a little BBQ sauce in the bottom. Add pork. Cover with remaining water and BBQ sauce. Cook for 2-4 hours on high, or 4-6 on low (or more!!!! if you have the time, I’d cook for 6-8 hours on low!!).
  2. Add green garlic after pork has cooked for about an hour.
  3. After 2-3 hours, in Crock Pot or on a cutting board, using 2 forks, shred the pork. Return to Crock Pot and continue to cook (on low or high, between 1-5 more hours – make sure there’s enough liquid so it doesn’t burn!).
  4. About 30 minutes before serving, add greens to Crock Pot and combine with pork.
  5. Assemble sandwich: bread/roll, pork, tomato slices, coleslaw (or coleslaw, tomato), drizzle a little BBQ juice over, top with bread. You can dip one slice/side of the bread/roll into the BBQ juice in the Crock Pot… it will make it extra messy! Serve with more coleslaw on the side, and home fries.

BBQ Sauce

Perfect for grilled meats, on pizzas, or in burgers!
Ingredients
  • 1/4 C white vinegar
  • 1/2 C apple cider vinegar
  • 1/4 C molasses
  • 2 T honey
  • 1/4 C brown sugar
  • 1/4 C tomato paste
  • pepper
  • 1/2 to 1 t chili & garlic sea salt
  • 1/2 to 1 t tropical pepper sea salt
  • pinch ginger
  • pinch nutmeg
  • 1 T smoked paprika
  • 1 t sweet paprika
  • 1 T chili powder
Instructions
  1. Whisk all ingredients together.
  2. Bring to a boil, reduce to a simmer until thickened and reduced, 15 minutes to 1 hour or so.
Notes

Makes about 2 C sauce before reducing.

Coleslaw

Coleslaw

Ingredients
  • 1/2 C buttermilk
  • 2 T mayo
  • 1 scant T honey
  • salt
  • 1 t paprika
  • 1 T dijon mustard
  • pepper
  • pinch cayenne
  • 1 t red wine vinegar (or more, to taste)
  • 1/4 C Greek yogurt (or regular yogurt)
  • 1 head cabbage, washed, cored, and finely chopped
  • 1 carrot, grated
Instructions
  1. Whisk together coleslaw dressing ingredients.
  2. Add carrots and cabbage and combine.

Home Fries

Ingredients
  • 2 medium/large potatoes, cut into thin wedges
  • 1 T chili powder
  • 1 T paprika
  • salt
  • pepper
  • olive oil
Instructions
  1. Toss potato wedges with seasonings and olive oil.
  2. Lay on a baking sheet.
  3. Bake at 375 F for 15 minutes, flip, bake an additional 5-10 minutes.

 

A Few Notes

On the show, I said to cook it 2-4 hours. That’s fine. But, if you have time, I’d cook it for more like 6-8, on low, with plenty of liquid. After I finished filming, I kept it cooking until dinner time. It was amazing!

The bread that I used got really soggy! It became a knife and fork sandwich. I used what I had, but if I was buying/making something specifically for this meal, I’d use a roll that’s got a good crust on it, that wouldn’t fall apart. All in all, it was a yummy 2 napkin meal!

Stuffed French Toast

Stuffed French Toast

French Toast gets Stuffed… and extra delicious!
Ingredients
  • 4 slices whole wheat bread
  • 2 pears (or whatever fruit you have that you enjoy), thinly sliced
  • 2-3 T peanut butter
  • 2 eggs
  • 4 T milk
  • a good sprinkle of cinnamon
  • dash nutmeg
  • pinch salt
  • drizzle of honey
  • maple syrup
  • Greek yogurt
  • walnuts
Instructions
  1. Cook pears with honey, until softened.
  2. Whisk eggs, milk, salt, cinnamon and nutmeg together.
  3. Spread peanut butter on 2 slices of bread. Top with fruit and another piece of bread. Dip both sides of the sandwich in the egg mixture, soaking well.
  4. Cook, flipping once, until it’s hot, a bit crispy and the egg is fully cooked.
  5. Serve topped with yogurt, walnuts and maple syrup.

Hello Meatloaf?!

Do you turn your nose at meatloaf? This dish has a stigma attached to it that it’s, I dunno, too simple?? My husband has been asking for meatloaf for years. Not like every day, but every once in a while will mention that he likes it and wouldn’t mind eating it. But I thought I didn’t like it, and didn’t want to make it.

My mom is a good cook. I remember her making meatloaf and I think I might have liked it. So it’s not like I had a terrible meatloaf eating experience as a child. I just had an opinion based on nothing.

Until I made it. It’s basically a burger sans bun, with amazing sides like mashed potatoes with mushroom gravy, and green beans. And you get to make leftover meatloaf sandwiches with it the next day. Winning.

Since our oven is on week two of being broken, I’ve been creative with the toaster oven. I’ve made pizza in there, roasted broccoli, and last night it was meatloaf.

The dog is licking his lips in the pic. He thinks the plates are for him. He always thinks this.

Meatloaf
 
Recipe Type: Dinner

Because we have two bottles of ketchup in the fridge I was inspired to make meatloaf.
Ingredients
  • 1 small zucchini, grated
  • 1/4 C onion, grated
  • 1 clove garlic, grated
  • 1/4 C ketchup
  • splash A1 sauce
  • 1 T balsamic vinegar
  • 2 slices bread, torn in small chunks
  • 2 T spicy brown mustard
  • 1 t chili powder
  • salt and pepper (to taste)
  • 1 egg
  • 3/4 to 1 lb. ground beef
  • I’ve made this before, slightly differently, by adding homemade BBQ sauce instead of ketchup and 1 grated carrot in addition, not instead of anything)
Instructions
  1. Put it all in a bowl and mix it with your hands.
  2. Grease a 9×9 glass dish (what I used, because it would fit in the toaster, if you want to use a loaf pan, do it, and adjust the baking time accordingly – might take an extra 20 minutes or so). Put the meatloaf in the pan.
  3. Bake at 350F for about an hour or until internal temperature reaches 160F. (I baked it in the toaster oven, so cooking time could vary with a conventional oven.)

Mushroom Gravy
 
Recipe Type: Sauce, Gravy

Ingredients
  • 2 C mushrooms, quartered
  • 2 C beef stock or pan drippings (you could also use vegetable or chicken, but for a beef dinner, beef is best)
  • 2 T balsamic vinegar
  • 1/2 C water (or more, if you want, or just use all stock)
  • 4 T olive oil, divided
  • 2 T flour
  • salt (opt.)
Instructions
  1. Heat 2 T oil in a skillet. Add mushrooms. Cook 3-4 minutes.
  2. Move mushrooms over to the side of the pan. Add remaining oil. Heat. Add flour and whisk in. Cook about 30-60 seconds. Add beef stock, water and balsamic vinegar. Whisk.
  3. As it continues to thicken, whisk. Add more water if it’s too thick. It’s good if the mushrooms are incorporated at this point.
  4. Add salt to taste, if necessary.
  5. Serve over mashed potatoes, meatloaf, or any other dish that deserves a little something extra.

Honey-Mustard Chicken Sandwiches

Some good friends of ours moved to Minnesota last week. Sad for us, happy for them. I helped them pack their worldly possessions into two shipping crates, and before leaving, she emptied most of the contents of her fridge into 3 grocery bags. I brought them home, and our fridge is now overflowing with condiments.

We have 2 or 3 of a few things, but I didn’t want to throw the extras out, because we have a hard time throwing out food. As I was standing and staring at the sea of ketchup and mayo, ideas started popping into my head about how to use things, in creative ways, to give myself a little more fridge space!

Here are some of my ideas:

Ketchup: Meatloaf, BBQ sauce, burgers.

A1 Steak Sauce and Mayo: Mix them together to make a mayo for roast beef sandwiches (a great way to use leftover roast beef) or burgers. Meatloaf.

Mayo: Ranch dressing, Blue cheese dressing.

Sun Dried Tomatoes: On pizza, in pasta, with chicken, on a crostini.

Pickles: I read in my latest issue of Food Network Magazine that pickle juice is becoming trendy. I usually just eat pickles with a sandwich, but, I wonder if they would be good with some parmesan and olive oil on a crostini. I’ve seen a recipe for chicken with pickles (haven’t tried it, but am curious about it). What about a pickle coleslaw (pickles, cabbage, shredded carrots, creamy or vinegar dressing)? I love pickles or pickle relish in tuna, but that’s kinda standard, at least in our house.

Chili Sauce: Thai Chicken with Peanuts and Chives, Stir fry.

Mustard (one of mine, I started getting inspired by everything in the fridge): Honey Mustard Chicken Sandwiches.

Soy Sauce (also mine): Soy Ginger Chicken with Sesame Seeds.

These are just a few ideas, off the top of my head.

Honey-Mustard Glazed Chicken Sandwiches

Inspired by the contents of a friend’s fridge when she moved to Minnesota, I made this sandwich with common condiments found in most kitchens: mustard and honey.
Ingredients
  • 2 Chicken breasts
  • 1 T Olive oil
  • 2 T Spicy brown mustard
  • 1 T Honey
  • 4-6 tomato slices
  • 2 pieces of lettuce (or a few, if small)
  • 2 Hamburger buns, or a baguette (sliced), or 4 slices french bread
  • Mayo (opt.)
  • Salt
  • 1/4 C Water
  • 1 T Cornstarch
Instructions
  1. Heat oil in pan over medium heat. Season chicken with salt and add to pan. Cook, flipping once, about 7 minutes/side, or until internal temperature reaches 170 F.
  2. Whisk water, cornstarch, mustard and honey.
  3. Remove chicken from pan. Pour honey-mustard mixture into pan and whisk. Add chicken. Pull chicken apart with forks (if you want to) and mix around in sauce.
  4. Assemble sandwich with mayo, chicken, lettuce and tomato.
  5. Great with potato chips (I made homemade, but store bought would be great too!).

Strawberry-Basil Sandwich

It’s perfect for this time of year (fresh basil from my garden and locally grown strawberries). Part of the idea is actually from something that Tim told me he made while I was in Colorado last week (strawberries on a sandwich). Sorry, I could have taken a photo, but, it didn’t last long enough. This was so good I didn’t want to eat anything else with it!!

Strawberry-Basil Sandwich

I just invented the most amazing sandwich.
Ingredients
  • 1 rustic roll (or hunk of crusty bread)
  • 1t spicy brown mustard
  • 1t balsamic vinegar
  • 1t extra virgin olive oil
  • 2 strawberries, thinly sliced
  • 4 basil leaves, fresh, torn
  • 1t red onion, diced
  • 4 slices parmesan cheese (or enough to cover the roll)
Instructions
  1. Bake roll (to crisp outside, and heat inside – don’t slice before baking) 350 degrees, 7 minutes.
  2. Prepare toppings.
  3. Halve roll; spread with mustard. Pour oil and vinegar over, press halves together (to let oil and vinegar soak in).
  4. Top with remaining ingredients.
