Shepherd’s Pie of the South

SouthernShepherd4I used to live in Texas. For five years. In between growing up in Ontario and my curent residence in California. In that time, one thing that I learned about the good ole folks, deep in the heart of Texas, is that they love them some barbecue. Oh boy, do they know how to grill.

There’s a restaurant that we used to go to called Rudy’s. Their slogan is “The worst BBQ in Texas.” I’ve no idea why they say this. Mmmm, Rudy’s… You stand in line, (I have to interrupt myself for a second. I’m reading this aloud as I type and all of a sudden I’ve developed a Southern accent. What?!), so, as I was saying, you stand in line, you order your brisket, beans, coleslaw, creamed corn, peach cobbler, and sweet tea. You pick up your order a few steps to your right, and they give you about a quarter of a loaf of white bread to go with it. I don’t know why. They just do. And you just eat it, because that’s the way it is at Rudy’s.

This Shepherd’s Pie is a tribute to my Texas friends and family. It has collard greens, barbecue sauce, sweet corn, shredded chicken, polenta, and a whole buncha other stuff. You can read the recipe. I’m not going to write it all out again. I’m not a true Southerner, so this is my take on it, from my brief stint there. If I got it wrong, well, it still tastes good, y’all.

My heart feels happy right now. I’m thinking of Texas memories. What a sweet time that was in my life. I think I’ll go look at some old photo albums for a while.

Shepherd’s Pie of the South

Shepherd’s Pie of the South

Ingredients

  • 1/2 T bacon grease (or olive oil)
  • 1/2 T olive oil
  • 1 T butter, unsalted
  • 1 onion, chopped
  • 1 C corn
  • 1 C (about 5 leaves) collard greens, chopped
  • 1 carrot, chopped
  • 1 leek, chopped
  • 1/2 to 1 t red pepper flakes
  • 1 t salt
  • 1/4 t pepper
  • pinch all spice
  • 6 cloves garlic, minced
  • 1 1/2 C chicken, cooked and shredded
  • 1/2 C barbecue sauce
  • 1 t dijon mustard
  • 1 t maple syrup
  • 1 t apple cider vinegar
  • 1 C water
  • 1 T cornstarch
  • 2 T cream
  • 2 T lemon juice
  • 2-3 C polenta
  • 1/2 to 1 C parmesan cheese, grated

Instructions

  1. Heat oven proof skillet (cast iron works great). Add butter, bacon grease, and olive oil and let them brown. Add all veggies (except garlic), vinegar, and seasonings. Cook over medium heat for 10 minutes, stirring occasionally. Add garlic and chicken and cook 5 minutes more.
  2. Whisk together water and cornstarch. Whisk in barbecue sauce, mustard, and maple syrup. Pour over chicken mixture. Cook over medium to medium-high heat for 3-5 minutes, or until chicken is heated through. Remove from heat. Stir in cream. Stir in lemon juice. Taste and adjust seasoning if needed.
  3. Top with polenta and smooth over meat and veggies. Sprinkle with cheese. Bake at 350F for 10-15 minutes, if using hot, fresh polenta (or 30-40 minutes, or until polenta reaches 165F, if using leftover, cold polenta). (*If the pan is really full, you may want to put a drip catching baking sheet under the pan just in case it overflows.) If you're using hot polenta, you could also just top with cheese and serve. It will melt from the heat of the polenta.

Ingredients
  • 3/4 C cornmeal
  • 3 C water
  • 1 C milk
  • 1 C cheese, grated
  • salt
  • pepper
Instructions
  1. In a medium sized sauce pan, boil water and milk.
  2. Add cornmeal slowly, whisking as you do. Let it thicken. When it has, remove from heat.
  3. Whisk in cheese, a little bit at a time. Add salt, and pepper.

Ingredients
  • 1 whole chicken
  • olive oil
  • salt
  • pepper
Instructions
  1. Line a pan with foil, drizzle with oil, sprinkle with salt and pepper.
  2. Place chicken in pan. Drizzle with oil, sprinkle with salt and pepper.
  3. Bake at 375F for 1 hour 15 min (until it gets to 180F), basting every 30 minutes.
  4. Let stand 10 minutes before serving.

Chili Cheese Fries with Coleslaw on Top

Spiced homefries are topped with beans and cheese. Yum!
Ingredients
  • 4 small – medium potatoes, cut in wedges
  • 3/4 C black beans
  • 1/2 C Roasted Vegetable Soup (or other puréed soup)
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • 1 t chili powder
  • 1 t smoked paprika
  • pinch cayenne
  • 1/4 t pepper
  • 1/4 t Kiawe smoked sea salt (or sea salt)
  • 1/4 t sea salt
  • 1/4 t chili and garlic smoked sea salt (or sea salt)
  • 1 T olive oil
  • 1 C cheese, grated
  • coleslaw
Instructions
  1. Combine seasonings. Toss potatoes with 1/2 T olive oil and half of seasonings. Bake at 375F for 35 minutes.
  2. Heat pan. Add olive oil. When hot, add onion, bell pepper, and remaining seasonings. Cook for 5 minutes, over medium heat, stirring occasionally. Add garlic, and beans, and cook for 2 minutes. Add soup and cook 3 minutes more, stirring often.
  3. Divide the potatoes into two piles and top with bean mixture and then cheese. Bake 3-5 minutes, or until cheese is melted.
  4. Top with coleslaw.

Shepherd’s Pie with Mustard Greens

Ingredients
  • 1/2 lb. ground beef
  • 1-2 T olive oil
  • 1 1/2 C broccoli raab, chopped
  • 3/4 C Korean daikon radish, diced or chopped
  • 3 mustard green leaves, chopped
  • 2 carrots (1 C), chopped
  • 1 C cabbage, chopped
  • 4-5 cloves roasted garlic*, mashed
  • 1/2 t chili powder
  • pinch cayenne
  • pinch cumin
  • pinch nutmeg
  • 1/2 t smoked paprika (plus more for topping)
  • 1 t salt
  • 1/4 t pepper
  • 1 T balsamic vinegar
  • 1 T cornstarch
  • 1 t dijon mustard
  • 1 to 1 1/4 C water
  • 4-5 C mashed potatoes (I use leftovers)
  • 1/2 to 1 C cheese, grated (creamy jack and cheddar)
Instructions
  1. Pre-heat oven to 350F. In an ovenproof skillet, cook beef. Drain (wipe out pan, if desired) and set aside. Add olive oil to skillet and let it get hot. Add all veggies and seasonings except mustard greens and garlic. Cook over medium heat for 10 minutes, or until veggies are tender.
  2. Whisk cornstarch with water, dijon, balsamic vinegar, and garlic. Pour over veggies. Stir in beef and mustard greens, and cook for 10 minutes over medium-low heat, stirring occasionally. If the liquid evaporates too much, add more water.
  3. Remove from heat. Taste, and adjust seasonings if needed. Spread the meat and veggies evenly in the pan (if you weren’t cooking in an oven safe skillet, now’s the time to transfer to a greased, ovenproof dish.) Cover meat mixture with mashed potatoes. Top with cheese and sprinkle with smoked paprika.
  4. Bake at 350F until the potatoes are hot (165F) and cheese is melted. With fresh, hot mashed potatoes, it should only be 10-15 minutes. With cold potatoes, it could be about 30-40 minutes (at least it was for me!).
Notes
Individual pies would also be a fun idea, especially for a dinner party! Great with a simple Green Salad, or Coleslaw. * To roast garlic: Slice the top off a head of garlic. Drizzle with olive oil and wrap in foil. Bake at 350F for 45-60 minutes. Once it’s cool, squeeze garlic from skin.

Pork and Beans Chili

Pork and Beans Chili

A warm and hearty chili.
Ingredients
  • 6 C fresh spinach, roughly chopped
  • 3 C pulled pork (with BBQ sauce)
  • 1-14 oz. can Italian Stewed Tomatoes (or whatever canned tomatoes you have), diced
  • 1-15 oz. can black beans, drained
  • 1-15 oz. can kidney beans, drained
  • 1-15 oz. can chili beans, drained (or pinto beans and add some: onion powder, garlic powder, paprika, salt, and tomato paste)
  • 2-3 t (or 3-5 cloves) garlic, diced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 C chicken stock
  • 1/2 C red wine (or apple cider)
  • 1 t salt
  • 1/2 t pepper
  • 1/2 t red pepper flakes
  • 1 T balsamic vinegar
  • 1 T lemon juice
  • pepperjack cheese, cut into matchsticks, for topping
Instructions
  1. Heat soup pot, add oil. When oil is hot, add onion, bell pepper, and seasonings. Cook for about 5 minutes, over medium heat.
  2. Add garlic, 2 min.
  3. Add balsamic vinegar, cook 1 minute.
  4. Add beans, tomatoes, and pork. Cook 10 minutes.
  5. Add stock and wine or cider. Bring to a boil, then reduce to a simmer, for at least 30 minutes, or until it’s the desired thickness (I wanted mine thick, so I cooked for a little longer than 30).
  6. Ten minutes before serving: add spinach and wilt down. Cook for 8 minutes. Add lemon juice, cook for 2 minutes. Taste and adjust seasoning.
  7. Serve topped with cheese sticks.

A perfect way to use leftover chicken or turkey! It’s quick, easy, delicious!
Ingredients
  • 1 wrap (I prefer whole wheat)
  • 1-2 C lettuce, washed and torn
  • 1/2 C leftover chicken or turkey, in smallish pieces
  • 1-2 T caesar salad dressing
Instructions
  1. Toss lettuce and chicken with dressing.
  2. Place onto a wrap.
  3. Roll up wrap.
  4. Eat and enjoy.
