- 1/2 C crushed tomatoes
- 1 jalapeño, seeds and ribs removed; diced
- 1/2 C to 1 C corn (fresh or frozen)
- 1 lemon, juiced
- 1 avocado, mashed
- cilantro, chopped (opt.) – I didn’t have any, so didn’t use any, but it would be good
- 1/4 C red onion, diced
- 1 clove garlic (or more), grated
- 1 t chili powder
- pinch ginger
- 1/2 t cumin
- Cut veggies.
- Mix all ingredients together.
- Serve and enjoy!
