Summer Daze – Scrambled Egg Tacos

Summer is a season I just want to get through. It’s hot and muggy and buggy and I don’t like any of that. I’m trying to enjoy it as much as a person like me can. But, if I’m honest, I’m really just waiting for fall.

There are some perks to summer. My garden is thriving… Ok, my kale is thriving and the potatoes went crazy. Everything else is still mini. I dunno why. I’ll take the kale though. I have plans for a kale pesto on some savory pancakes. The garden provides a place for simple summer meals. At this time of year I feel like I need less food and more drinks. Makes sense. The produce that’s available right now is more water-laden than its winter friends. Think zucchini compared to butternut squash. Both delicious, but who’s craving winter squash right now?!

Last week I made Tired Spaghetti. It was a simple and easy meal for a tired workday. It had burst grape tomatoes, garlic, chickpeas, pasta water, cream, Italian Hot Salt, Kosher salt, and pepper. I cooked the pasta while the tomatoes did their thing in some olive oil. Then I added some pasta water to the tomatoes and other saucy ingredients. I drained the pasta when it still had a bit of a bite, and let it finish cooking in the sauce. It was exactly what we needed that night.

Today, I’m sitting at the kitchen table to work. On days like this, lunch needs to be quick and filling enough that I don’t need a snack break twenty minutes after I eat. Our fridge is stuffed with food… but it’s mostly condiments. I don’t know if we really need a whole shelf of jars of mayo, pickled veggies, and different varieties of Asian sauces. But, somehow we can’t bear to part with any of them. So we shrug our shoulders and use them up bit by bit.

I have some mayos by Sir Kensington’s that I really love. I eat the Sriracha and Chipotle mayos most days. Usually I stand at the counter and shove fistfuls of corn chips dipped in both mayos into my face. If we don’t have dinner planned and started as soon as we get home from work, this is what I eat. And I usually eat so much that I’m not hungry when dinner is ready. It’s a problem.

This morning I planned our menu for the next two weeks. But, I forgot to plan something for today’s lunch. I almost gave in and just ate corn chips and mayo. It would have tasted so good. But, I saw the eggs and corn tortillas and figured that with a little bit of effort I could make something a little bit more substantial.

It was really good. I’ve got the basic recipe below. But, it’s more of a use what and however much you want kinda thing. So, do that.

Scrambled Egg Tacos – Serves 1

Ingredients

  • pat of butter
  • 2 eggs
  • pinch of salt
  • 2 corn tortillas
  • pinch of grated cheese for each taco
  • Sriracha mayo
  • Chipotle mayo
  • 1 French breakfast radish, very thinly sliced
  • chopped chives or scallions
  • Maldon salt

Directions

  • Heat the tortillas.
  • Heat a skillet and add the butter. Whisk the eggs with a bit of salt (you can add a splash of water/milk/cream to them too). Add them to the hot pan and cook until they’re softly scrambled. Don’t overcook them!
  • Top each tortilla with a scoop of eggs, some cheese, either or both types of mayo, some radish slices, the chives, and a few Maldon salt flakes.

Loaded Chicken and Rice Soup

I’m a sucker for a good bowl of soup. I think we’ve had three different kinds over the past four days. I love it. I can’t get enough of it. It can be hearty and filling, or a light start to a meal. It can be simple, like French Onion, or have a myriad of ingredients. Soups are a great way to get loads of veggies into a meal, and they’re a fabulous place to hide leftovers. Yes, soups are my favorite.

This one is no different. The goal was to make a veggie laden, leftover using, Chicken and Rice Soup.

It started with carrots and radishes. The carrots were fresh from this week’s box of produce. The radishes were extra from another meal, that I’d chopped and frozen so they wouldn’t go to waste.

We’re getting so many greens in our boxes that I’ve been making a lot of Stir Fry, like this Red Choi Stir Fry from the other week. I’d planned ahead and made double the rice, so there were leftovers for the soup.

After the initial veggies were fairly tender, everything else joined them in the soup pot. I made some Sliced Roasted Butternut Squash for dinner last night, to go along with some chicken thighs that I par-cooked on the stovetop, then finished in the oven. I used the leftovers from both in the soup.

After everything bubbled around for a while (but not too long, since it was all cooked already), I added some milk. I used coconut milk, because I had some that I needed to use up. Use whatever kind you have on hand. The milk just needs to warm through for a minute or two. Don’t let it boil, or the soup may break.

And then, for the finishing touches, I stirred in some fresh parsley and a knob of butter.

This soup is best eaten with your favorite someone or alone standing at the kitchen island while you read a book. Fresh bread is essential for dipping and sopping up anything the spoon leaves behind. A slice of lemon is a perfect way to brighten a bit – just squeeze over top right before eating.

And, if it’s possible, this soup may be even better the next day (or a few days later – it freezes well).

Loaded Chicken and Rice Soup

Loaded Chicken and Rice Soup

Ingredients

  • 1-2 T olive oil
  • 1 C carrot (or parsnip), chopped
  • 1 C radish (or cauliflower), chopped
  • to taste, salt
  • 3 cloves garlic, diced
  • 2 T balsamic vinegar
  • 1/2 t dried rosemary (or 1 t fresh), broken or chopped
  • 1 t fresh thyme (or 1/2 t dried)
  • 1/2 t paprika
  • 1 C cooked chicken, chopped or shredded (I used leftovers)*
  • 2 C rice, cooked (I used leftovers)***
  • 2-3 C greens (like hon tsai tai, komatsuna, Tokyo bekana, chard, kale, collards, or spinach), chopped
  • 1 1/2-2 C winter squash, chopped (I used leftovers)**
  • 5-6 C chicken stock
  • 1 C milk (any kind)
  • 1-2 T fresh parsley, chopped
  • 1 T unsalted butter (optional)
  • lemon wedges, for serving

Instructions

  1. (*If you're not using leftover chicken, cook it now, let it cool slightly, remove from bones and shred or chop.)
  2. Heat a soup pot over medium-low heat. Add the oil and when it's hot, add the carrots through salt (**unless you're using uncooked winter squash - if you are, add it now). Cook for 7-9 minutes, or until veggies are relatively tender. Add the garlic and cook for 1 minute more. Stir in balsamic vinegar, cook for 1 minute.
  3. Add rosemary through stock. Bring to a boil, then reduce to a simmer and cook for about 13 minutes, or until veggies are tender (***if you're not using leftover rice, also add 1/2 C raw brown rice now, along with an extra 1 C stock and cook until rice is tender). Add milk and cook for 2 minutes more (do not boil).
  4. Remove from heat and stir in parsley and butter. Taste and adjust seasoning if needed. Serve with a squeeze of lemon.

Veggie Pizza with Artichoke Hearts

Things I learned today:

The smoke detector will go off when the oven is at 500F and there’s a pizza stone in there.

Artichokes may be best on pizza.

When I’m tired I type things like, “Almost anything is better when it tastes like garbage.”

I like one of these two lessons. No, two of them. I still can’t stop laughing at the garbage line. And I like that almost anything is better when it tastes like pizza.

Take artichokes for example. Sure, they’re fun to eat steamed, grilled, boiled and then dunked in dip. That’s a good thing. But, I wondered to myself the other day if they might not be even better on pizza.

I think they are. It may be my new go-to way to eat them.

Carrots on the other hand, can be used in about a million different ways, and are delicious in all of them. I mean, you can make them into cake for goodness sake! (And I made a rhyme… cool.) How many things can you eat raw and in a cake and call them both extraordinary?

Rosemary compliments the artichokes and carrots. Lemon zest and juice are added to tomato sauce to make a tangy, citrusy pizza. Everyone is topped with some Gruyère and Parmesan cheese. Yep, you’re welcome.

One of the day’s lessons came when I was following the recipe in Alice Water’s The Art of Simple Food for pizza dough. Her recipe says to pre-heat the oven to 500F with a pizza stone in there. I was gonna prepare the pizza on the pizza peel and slide it onto the hot stone. But, our smoke detector is in our kitchen (since our kitchen is a part of the living room), so it started screaming at me. I know that pizza stones can smoke, but I didn’t want the noise to continue. So, lesson learned. For as long as we live here, with this particular kitchen, I will not be using a pizza stone.

I used a regular pizza pan and it worked out just fine. Plus the noise stopped.

The artichoke hearts were steamed before they went on to the pizza, which makes them tender and delicious. The lemon gives them a good citrusy kick, and the rosemary brings an earthy balance to each slice. The carrots, well, they seem to get along with everyone, so they’re there, in the background, sharing a little bit of sweetness.

All in all, a great new way to use artichokes… or maybe just new to me. You might have been doing this all along. Sometimes I need to catch up. Especially on a day like today when my brain has not brought it’s A game. I blame the olympics. They keep me up way too late.

Veggie Pizza with Artichoke Hearts
 
Recipe Type: Pizza, Main Dishes, Vegetarian

Serves: 2-4
Ingredients
  • 3 large artichoke hearts (choke removed), halved (save leaves to steam and eat)
  • water
  • 1 pizza crust
  • 1 C tomato sauce
  • 1/2 to 1 t fresh rosemary, chopped
  • to taste salt
  • to taste pepper
  • 1/4 to 1/2 t red pepper flakes
  • 1 lemon, zested and juiced
  • 1 small carrot, grated
  • 3/4 C gruyère cheese, grated
  • 1/4 C parmesan cheese, grated
Instructions
  1. Pre-heat oven according to your favorite pizza crust recipe.
  2. Place artichoke hearts in a steamer basket in a pot with about 1″ boiling water in the bottom. Cover and cook for about 15 minutes, or until artichokes are tender. Roughly chop and set aside.
  3. To make sauce: Combine tomato sauce with rosemary, seasonings, lemon zest and juice. Taste and adjust seasoning if needed.
  4. Roll out pizza dough.
  5. Top crust with sauce, cheese, veggies, and a little more cheese.
  6. Bake according to crust recipe until crust is crispy and slightly browned and cheese is melted.
 
Notes
The sauce is enough for 3-4 pizzas. Freeze any leftovers for next time!

Tomato-Corn Salsa

Tomato-Corn Salsa

A tomatoey, spicy corn salsa.
Ingredients
  • 1/2 C crushed tomatoes
  • 1 jalapeño, seeds and ribs removed; diced
  • 1/2 C to 1 C corn (fresh or frozen)
  • 1 lemon, juiced
  • 1 avocado, mashed
  • cilantro, chopped (opt.) – I didn’t have any, so didn’t use any, but it would be good
  • 1/4 C red onion, diced
  • 1 clove garlic (or more), grated
  • 1 t chili powder
  • pinch ginger
  • 1/2 t cumin
  • salt
  • pepper
Instructions
  1. Cut veggies.
  2. Mix all ingredients together.
  3. Serve and enjoy!
