Ta-may-toh Stuffed with Keen-Wah – Stuffed Tomatoes – Episode 34

It’s almost lunch time as I type this post. I’m hungry. I want to eat everything.

When I was looking at what was going to arrive in this week’s box, the tomatoes (“Ta-may-toh”) kinda jumped out at me. I’ve made stuffed peppers before. Why not stuffed tomatoes?! I’ve heard of other people doing it. I guess we just use our tomatoes up too quickly to get around to doing this. Tomatoes are really good for us: We’re talking lycopene (a natural antioxidant) and it’s thought to benefit the heart*!

Do we really need an excuse to eat tomatoes though?!

I often have leftover quinoa in the freezer. It’s pronounced “keen-wah”. Did you know that? I’d been calling it the wrong thing for years. Now I know. It’s easy to make, higher in protein (about 14g/3.5oz.) than rice or pasta (I still totally eat rice and pasta), and is very versatile. It’s not just a protein, but a complete protein and is high in dietary fiber**. Yay Quinoa!

This could be a dinner, going alongside some Roast Beef (haha I typed “meef”: meat + beef = funny), Pan Seared Pork, Roasted Chicken… You could chop up any of said meats (cooked first) and add to the filling and have this as your main dish with a big salad.

You could eat it as a light lunch (or even breakfast), alongside a Fried Egg and a slice of hearty toast! You could make this vegetarian by omitting the bacon and adding chopped almonds for crunch. Get creative with your food!

Stuffed Tomatoes

Serves: 2-6
Summer tomatoes are stuffed, roasted, and topped with crunchy bacon!
Ingredients
  • 4-6 tomatoes, seeded and cored
  • 1 T fresh oregano, diced (1 leaf reserved per tomato for topping)
  • 1 ear of corn, off the cob
  • 1 onion, diced
  • 1 C squash, diced (I used a small zucchini, but any summer squash would work)
  • 2-3 cloves garlic, minced
  • 1 C quinoa, cooked (I used leftovers)
  • 1/2 t salt (I used Lemon, Thyme, and Bay Sea Salt, but regular salt would work just as well)
  • 1/4 t pepper
  • 1 T olive oil
  • 1 T tomato paste
  • 1 T balsamic vinegar
  • 1/4 C parmesan cheese, grated (reserve 2 T for topping)
  • 2 pieces bacon, cooked and crumbled (for topping)
Instructions
  1. Heat a medium sized pan. Add oil. Add onion, squash, salt, and pepper. Cook over medium heat until veggies are tender, about 5 minutes. Add garlic, oregano, corn, tomato paste, vinegar, and quinoa, stir (make sure tomato paste is combined) and cook 2-3 minutes.
  2. Remove from heat, taste and adjust seasoning if needed, then stir in parmesan cheese (reserving a bit for topping).
  3. Stuff filling into hollowed out tomatoes. Bake at 350F (I used the toaster oven) about 20 minutes.
  4. Top each tomato with crumbled bacon, 1 T parmesan and a fresh oregano leaf.
Notes

If you’re not using leftover quinoa: Bring 1 C water to a boil. Add 1/2 C quinoa. Cook about 15 minutes. Will yield about 2 C cooked. It freezes well.

Mediterranean Quinoa

This blogging adventure of mine is still a pretty new endeavor. It has needed plenty of encouragement, support, and love. When I first started (officially) blogging a little less than a year ago, I asked a few friends if they wanted to be ambassadors. Their job was/is to tell people about my blog and get them interested. In return I promised to create a dish for and named after them.

This past Wednesday, after a long and tiring day of editing, I was trying to come up with something for dinner. I finished work at 6, and was supposed to Skype with my family a few minutes later. I had something on the menu, but hadn’t done any work to prepare it (and might not have even had all the ingredients required). So I stood at the pantry cupboard and sought inspiration. I think some of the best meals come from staring at a bunch of ingredients sitting on a shelf. This was no exception.

The ingredients that sounded yummy to me reminded me of what one of my ambassadors had said she liked. The wheels started turning and I soon had the makings for “Mediterranean Quinoa for Stephanie”.

While I cooked, I had a small glass of wine. I was finishing up the dish and preparing to plate so I could take a few photos, so I poured a little more for the photo. Or so I thought. I realized that I’d picked up the olive oil, which was sitting right next to the bottle of wine, and poured it into my mostly empty wine glass. Whoops. Have I mentioned that I was really really tired!? Not one to waste food or wine, I poured the glass into the dish of rosemary infused olive oil and balsamic vinegar that we were going to dip our bread into. 🙂

A little bit about Stephanie Gladysz… She’s become a friend because I’m friends with her daughters Genevieve of Create Nourish Share, and Alexandra of Pink and Honey. She lives in Regina, Saskatchewan, Canada. It gets really really cold there in the winter. She and her husband own and operate Joey’s Restaurant in Regina, SK. They make really great fish and chips! She wrote a book called (Gasp) I have an idea! She’s really good at connecting people to my blog and often tells someone a specific post that reminded her of them. She’s a good encourager too. I’m thankful that she’s been willing to tell people about my work.

Mediterranean Quinoa

Mediterranean Quinoa

Ingredients

  • 1/2 t salt (or more)
  • 1/2 to 1 t freshly ground black pepper
  • 1 t fresh oregano, chopped
  • 1/2 sweet paprika
  • 2 C kale, stems removed, torn
  • 1 tomato, chopped
  • 1 C black beans, lentils, or garbonzo beans, cooked
  • 1 1/2 C veggie stock
  • 1 C water
  • 1 C quinoa, uncooked
  • 3 cloves garlic, minced
  • 1 small red onion, diced
  • 3 T olive oil
  • 1 T lemon juice, for serving
  • parmesan cheese, grated, for serving
  • green or kalamata olives, chopped, for serving

Instructions

  1. In saucepan, heat 1 T olive oil; add onion, salt, pepper, and paprika. Cook 3 minutes.
  2. Add garlic, cook 1 minute.
  3. Add quinoa and oregano. Stir and cook 30 seconds - 1 minute.
  4. Add water and stock, bring to a boil. Add beans and simmer 10 minutes. Add tomato, 5 minutes more.
  5. Turn off heat. Stir in kale, oregano, and remaining 2 T olive oil.
  6. Serve topped with olives, a squeeze of lemon juice, and parmesan cheese.

Lentil Quinoa and Carrot Supper

Ingredients

  • 1 C lentils (rinsed and sorted)
  • 1/2 C quinoa (rinsed and sorted)
  • 2-3 C water
  • 1 C red wine
  • 1 C greens (I used spinach)
  • 2-3 carrots, chopped in rounds
  • 1 C cauliflower, chopped in bite-sized pieces
  • 1 green garlic, chopped (or 1 clove regular garlic)
  • 1 T za'atar seasoning
  • 1 t smoked sea salt
  • pepper
  • pinch nutmeg
  • 1 t paprika
  • 1 T coconut oil
  • 1 T olive oil
  • parmesan cheese, shaved, for topped
  • parsley, for topping

Instructions

  1. Heat medium to large pan on stove. Add oils. Add carrots, cauliflower and seasonings. Cook 5 minutes, or until veggies are getting tender, over med heat. Add green garlic, cook 2 minutes or so.
  2. Add water, wine, lentils and quinoa. Bring to a boil. Cook about 15-20 minutes, or until lentils are tender. Add more water if necessary. Add greens about 5 minutes before serving. Water should be absorbed, not like soup - unless you want soup!
  3. Serve topped with shavings of parmesan cheese and parsley, along with some good bread.

Pumpkin Pasta

Do you want to do something with the extra pumpkin filling you didn’t use in your Pumpkin Pie? One option is to make another pie. Or, you could make some pumpkin pasta for dinner on Friday night. If you didn’t have Pumpkin Pie, but have some winter squash that needs a delicious use: roast it, scoop it out, puree it (freeze it, if you’re not ready to use it yet)… then you’re ready to cook!

Ooh, another yummy way to use leftover pumpkin is on grilled cheese. Not kidding. Take a little pureed pumpkin (about 2 T per sandwich) and spread it on a slice of bread. Top with cheese, close the sandwich, and butter (or olive oil) the outside of the slices and grill until cheese is melted and bread is toasty (I’m sure you know how to make grilled cheese, so all that was probably totally unnecessary).

For more ways to use Thanksgiving leftovers, check in on Friday. Until then, enjoy your loved ones, the turkey, potatoes, gravy… I don’t need to list the whole meal, mostly because it’s making me hungry, and you know what it entails. Happy Thanksgiving, Friends! Here’s the pasta. It’s basically like Mac and Cheese meets Pumpkin.

Pumpkin Pasta

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 2-4

Ingredients

  • pasta (rice, whole wheat, or regular - spaghetti, rotini, penne)
  • 2 T olive oil
  • 2 T flour
  • 1 C (or more) milk
  • 1/2 C stock (or water, or milk)
  • 1 C pumpkin, pureed
  • pinch cumin
  • pinch all spice
  • salt
  • pepper
  • 1/4 t red pepper flakes
  • 1 C sharp cheddar cheese (or whatever cheese you like), grated
  • 1/4 C parmesan cheese
  • 1/2 C pasta water
  • 1/2 T balsamic vinegar

Instructions

  1. Cook pasta (reserve 1/2 C pasta water before draining pasta).
  2. Heat oil in pan, add flour. Whisk together and cook 30-60 seconds. Add milk and stock slowly, whisking as you do. Once it's getting thick, add pumpkin and seasonings. Bring almost to a boil (try not to let it boil - the sauce may break) and turn heat off. Add cheese, whisking; add pasta water and balsamic vinegar.
  3. Serve topped with any, all or none: homemade croutons (toasted slices of bread seasoned with olive oil, chili powder, salt and pepper), caramelized onions, parmesan, bacon. Great on it's own, or as a side with chicken or beef or leftover Thanksgiving turkey.

Rachel’s 5 Cheese Pasta à la Sookie

Rachel’s 5 Cheese Pasta à  la Sookie
 
Recipe Type: Main Dish, Pasta

Tim doesn’t like the way I make Mac and Cheese. So, I call it Pasta à  la Sookie (a reference to the Gilmore Girls) so he will eat it. He knows this. I have many versions, this was one of them concocted for an easy dinner… enjoy!
Ingredients
  • 1/4 C Plain yogurt
  • 1/4 C Cream Cheese
  • 1 1/2 C Grated Cheese: Extra Sharp Cheddar, English Cheddar with Carmelized Onions (can be found at Trader Joe’s), Parmesan, Monterey Jack
  • 1/2 Medium onion, diced
  • 5 Cloves garlic, diced (use less if you don’t like garlic as much as I do)
  • Pinch Red Pepper Flakes
  • 1/8 t All Spice
  • Salt and Pepper
  • 2-3 T Olive Oil
  • 2 T All Purpose Flour
  • 1/2 LB Farfalle Pasta
  • 1 head of broccoli (for 2 people), cut into med sized pieces
  • 1 T Olive Oil (for Broccoli)
Instructions
  1. Heat pasta water, and pre-heat oven to 425 F.
  2. Heat a pan over med heat, add 2T olive oil, let it get hot; add onions; sauté until almost translucent, then add garlic (make sure pan isn’t too hot so garlic won’t burn); add spices.
  3. If the oven is hot, put the broccoli on a baking sheet, drizzle with 1 T olive oil and a bit of salt and pepper; bake 10-15 minutes, or until it’s slightly browned. Cook the pasta.
  4. Make a roux by adding 1 T olive oil, if needed, then 2 T flour; whisk in; cook out 1 minute. Add milk very slowly, whisking as you do and letting it thicken as you add. The milk needs to get hot, but just to where there’s steam, try not to let it bubble so it doesn’t break. Once the milk has thickened, and is hot, turn the heat off (I use cast-iron skillets, which really hold their heat, if you’re using a different kind of pan, you may want to keep it over low heat), add the yogurt; whisk in; add the cream cheese; whisk in; add the grated cheese (not all at once); whisk in.
  5. Pour pasta into cheese sauce, combine. Add more salt and pepper if needed.
  6. To serve: Place broccoli in the bottom of a bowl, top with pasta. Great with a crusty bread and a glass of wine.
 
Notes

Hope you enjoy it! Don’t forget to sub something else in, if you don’t have something that I used (broccoli, type of pasta, types of cheese etc). And, if you don’t have 5 kinds of cheese, don’t worry about it! Use what you have!
