Something Kinda Sweet – Pear and Gorgonzola Pizza

Ok, they’ve been here for a few weeks, but let’s get excited none-the-less. Because because because we’re paring pears with sweet caramelized onions, and tangy gorgonzola cheese, all on a pizza crust.

You’re welcome.

This pizza (or flatbread if I’m using crust from the freezer) is pretty rich. I’d recommend serving it with something light, like a crisp spinach salad with a bright dressing. I’d recommend sharing it with someone that you love while watching a movie that’s equally rich and sometimes a bit goopy. I’d recommend eating it slowly, savoring the way the honey compliments the cheese which compliments the pears which are complimented by the caramelized onions. I’d recommend plenty of napkins. That’s what we did for Pizza Friday a few weeks ago. It was marvelous.

If you’ve got figs instead of pears, you could do a straight switch. Mmm that would be good too. Have you ever tried roasted figs? They’re as good as roasted pears… as roasted anything.

Roasting fruits and veggies brings out a deep richness that we may otherwise not know is there. It’s a complex taste. It could be likened to the way a good movie, a great song, a lovely piece of art can resonate in our souls.The way an aged cheese, a full bodied wine, or reduced balsamic vinegar have a depth to them that lends a broader sense of the original flavor.

Food goes beyond the nourishment, enjoyment, and strength that it provides. It can be art.

And it sure does taste good.

I like edible art.

Pear and Gorgonzola Pizza
Recipe Type: Main, Pizza, Fruit, Vegetables, Cheese, Dinner

Serves: 2-4
Ingredients
  • 1 large red onion, thinly sliced
  • 1 T honey
  • 1-2 ripe pears, thinly sliced
  • 1/4 to 1/2 C gorgonzola
  • 1-2 t olive oil
  • 1 pizza crust
  • pepper
  • honey, for serving
Instructions
  1. Pre-heat oven to 425F.
  2. Add onion and honey to a dry skillet. Cook over medium-low or low heat for 20-30 minutes, or until onions are caramelized, stirring occasionally.
  3. Roll out crust on a greased baking sheet. Poke all over with a fork, if desired. Bake for 5 minutes.
  4. Top crust with a drizzle of olive oil, pear, onion, pepper, and gorgonzola. Bake for 7-10 minutes, or until crust is done and cheese is melted.
  5. Drizzle with honey and serve.

Simple Pizza Friday

It’s the end of the work week. Are you tired? I am. And that’s ok. It was a busy week, but lots got done. Let’s celebrate that with a simple Pizza Friday meal.

All you’ll need are some tomatoes, red onion, mozzarella, and some herbs. Oh, and a pizza crust would be helpful here.

You can make your own, or buy a pre-made one at the store. I’ve done both. I like both. Mostly, I just like pizza.

I know people who make cheese. I’m not one of them. Are you? I want to be. Maybe someday. For now, I will enjoy Pizza on Fridays (or any day really) and be thankful that our grocery store is always stocked with plenty of mozzarella!

Tomato and Onion Pizza

A simple pizza is the perfect way to end the week.
Ingredients
  • 1 pizza crust
  • olive oil or AP flour for the baking sheet
  • 1/2 C (or more) tomato sauce
  • 1 t dried basil
  • 1/4 t dried thyme
  • 1/2 t dried oregano
  • 1/2 t dried parsley
  • 1/4 t dried rosemary, chopped
  • 1/4 t red pepper flakes
  • salt, to taste
  • pepper, to taste
  • 1 ball mozzarella cheese, sliced
  • 1-2 tomatoes, sliced
  • 1/2 red onion, sliced
  • 1 t dried or fresh savory
  • lemon wedges, for serving
Instructions
  1. Pre-heat oven to 425F.
  2. Dust baking sheet with flour or grease with oil. Roll out or press out pizza crust. Bake crust for 5 minutes.
  3. Stir together tomato sauce and seasonings (except savory). Taste and adjust if needed.
  4. Top crust with sauce, cheese, tomatoes, onion, and savory. Bake for 7-10 minutes (or according to your crust’s baking instructions).
  5. Serve with a squeeze of lemon.

Day After Thanksgiving Pizza (That Doesn’t Contain Turkey)

The big meal day is over. But you have a lot leftover, don’t you? We do. And I might offer to make either Thanksgiving Soup or Spicy Turkey Chili. Tomorrow. Tonight, it’s Pizza Friday!

Last week, on Pizza Friday, I was tired, I’d been cooking for most of the afternoon, and I didn’t feel like coming up with a creative pizza. Plus, I didn’t have any dough made. I know, poor me. So, after taking a break to look at Instagram, where I spotted my friend, Lisa’s, pizza creation that looked like it had peppers on it, I thought that maybe I’d just do a simple pepper pizza with cheese. I had some French bread dough rising, so I stole a bit and used it for the crust.

This was a good idea. This was a very good idea. Husband said it was his favorite crust that I’d made in a long time. I had to agree. It was thin, crispy, but also a bit chewy, and so delicious!

In case you need a one meal break from turkey, here’s my simple recipe. Sorry I don’t have a photo of the pizza. We were hungry and I didn’t think it would be so good it would warrant a blog post. I should know better by now. Always, always, always take a photo. 🙂

Bell Pepper Pizza

Simple: bell peppers, sauce, and cheese. Done. Eat some pizza.
Ingredients
  • 1 bell pepper, thinly sliced
  • 1 C finely grated cheese (I used a mixture of cheddar and Gruyère)
  • 3 T tomato paste
  • 1 T balsamic vinegar
  • 1-2 T water
  • pinch salt
  • 1 T garlic infused olive oil (or just regular olive oil)
  • 1 t olive oil
  • 1 pizza crust (I used French bread dough, after it had gone though its first rise)
Instructions
  1. Grease baking sheet with 1 t olive oil. Spread out dough. Bake at 450F for 7 minutes. Remove from oven. Using a spatula, gently unstick from pan, if it’s stuck.
  2. Mix together tomato paste, vinegar, salt, water (use just a bit to start), and remaining olive oil. Spread sauce on crust. Top with peppers and cheese.
  3. Bake for 5-7 minutes more.
