Hearty Winter Salad with Dill Dressing

Very rarely do I want a break from soup when the weather is cold. But, every once in a while it’s ok to take a breather from a steaming bowl of goodness. And I really do love the crunch of raw veggies. I also like how different a salad looks in the winter, compared to summer.

This simple meal starts with some hardboiled eggs. If you’re not in the mood for eggs, you could use tuna as an alternative.

When I was cooking these eggs, I thought I’d try to do them a different way from the way that I always do it, the way that works every time. I’d seen it done differently on TV, or read about it on a blog, or someone said something at some point in life about a different way to hard boil an egg.

Always a sure sign that something will turn out splendidly.

I ended up with soft boiled (aka goopy not fully cooked) eggs. Not at all what I was hoping for. So I returned them to the pot and re-boiled them the way I’d always done it. The way my mom taught me.

They turned out perfectly.

Lesson learned.

Veggies that I had on hand to go with the eggs: broccoli and radish. You could also use beets, crispy potatoes, peas, carrots, cauliflower, or cabbage.

Since I’m still obsessed with dill, I made a creamy dill dressing. It’s mostly Greek yogurt, because I was almost out of mayo. But, I’m happy with how it turned out, so I wouldn’t change the recipe. But, if you like a little less tang, switch up the proportions to suit your tastes.

This salad was seriously filling, with chickpeas and eggs on there. I made it to go along with the Spaghetti Squash au Gratin that I’d made for lunch the same day, but didn’t end up eating it until dinner, since the Gratin was more filling than I’d expected. As a light dinner, it was perfect (for me anyways). (I keep hitting the caps lock key so it looks like I’m screaming half of each word at you. I must have a rogue pinky finger.) A small portion of each would go nicely together.

Winter Salad

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: Serves 2-4

Winter Salad

Ingredients

  • 4 eggs, hard boiled and chopped (or you could use tuna)
  • 1/2 C Greek yogurt
  • 2 T mayo
  • to taste salt
  • 1 T balsamic vinegar
  • 1 T fresh dill, chopped
  • 1/4 C olive oil
  • greens (lettuce, kale, spinach, chard), torn
  • 1/2 C broccoli, chopped into small pieces
  • 1/4 C radish, very thinly sliced
  • (could also add: grated carrots, chopped cauliflower, shredded cabbage, peas, crispy potatoes, beet chips)
  • 1/4 C chick peas

Instructions

  1. Cook eggs.
  2. Whisk yogurt through dill. Whisk in olive oil. Taste and adjust seasoning if needed.
  3. Top greens with veggies, chick peas, hard boiled eggs, and dressing.

Dilly Eggs with Lentils

We all have our go-to meals. For me, sometimes it’s pasta, often it’s soup, more often than not, it’s eggs.

Remember last week when I wrote about lentils? I had a great idea to top sweet potatoes with them.

I also had a ton of lentils leftover.

I thought that those leftovers would be great topped with a fried egg and some dill.

I was right.

I’m kinda obsessed with dill right now. I’m not sure why. Maybe because up until a year or so ago I didn’t think I liked it. I guess it was one of those tastes that I didn’t like as a kid and had never really found a way to enjoy as a grownup. Until my friend, Christy, introduced me to it, in some of the foods she made.

Now I want to eat it in all the things. (I’ll have a Winter Salad for you soon that also uses dill… Can’t stop won’t stop.)

Back to the eggs again for a sec. The reason they’re such a go-to for me: they can be made into so many different things, in no time at all. Treats like, French Toast Stuffed with Fresh Fruit and BasilEnd of the Week Pasta topped with a fried egg, scrambled into some summer squash to make Squash ‘n Eggs. And never mind all the wonders they can do to baking, or the fact that they make things like Chicken Pot Pie look so amazing when they’re used. They’re one of my best kitchen friends.

This meal is a great example of one of my favorite types of meals. Effortless, nutritious, delicious.

Simple foods.

This dish takes humble ingredients, lentils, eggs, lemon, and dill, and really lets them shine.

I will definitely be eating this again soon. Maybe for dinner tonight.

Dilly Eggs with Lentils

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: Serves 2

Dilly Eggs with Lentils

Ingredients

  • 1 C cooked lentils (I used leftovers from my Lentils on Crispy Sweet Potatoes, so they were already seasoned)
  • 1 t olive oil
  • 2 eggs
  • pinch salt
  • 1-2 t fresh dill, chopped
  • 2 slices lemon, for serving

Instructions

  1. Re-heat lentils until they are hot.
  2. Heat a skillet over medium-high, add oil, then eggs. Cook until done, flipping if desired. Season with salt.
  3. Divide lentils between two plates and top with eggs, dill, and a squeeze of lemon.

Lentils on Crispy Sweet Potatoes

I wonder if you may have some sweet potatoes left over from Thanksgiving. Hiding in the dark pantry, waiting to be used. Purchased with the best of intentions… Sound familiar? I was out of town for Thanksgiving, so I didn’t get to use any of my sweet potatoes. I had quite a collection. They needed to be cooked.

I thought that red lentils, with their slightly mushier texture, might be nice over top of some crispy sweet potatoes. I’ve done something similar with leftover chili served over crispy potatoes. Why not with lentils and sweet potatoes?!

I like crispy potatoes (sweet or regular) with lots of seasoning. This time I went with salt, cayenne, coriander, ginger, and pepper. I also really like potatoes with paprika and chili powder. Uhh luuuk it uhh laaat.

Tossed with a bit of olive oil, onto a baking sheet, and into the oven.

I’d never tried red lentils before. I think I usually use green. Use whatever you have on hand. Just vary the cooking time depending on your lentil. (Red lentils cook a bit faster, like closer to 10 minutes, green lentils take a bit longer.) Okay? Okay.

Every once in a while it’s like the perfect storm and I have no garlic or onions in the house. Disaster!! Tim brought me some garlic yesterday. Relief! (Also, we aren’t completely out of onions, but are running low… if you were worried.)

The garlic cooks for just a minute, then some dijon, balsamic vinegar, and a pinch of coriander, ginger, and salt is added.

They’d been added to the lentil pan, after the lentils were drained and set aside. Then added back in to mix it up with the other flavors.

Sweet potatoes pop out of the oven. Crispy outside, tender inside.

Sometimes I like to have cilantro with sweet potatoes. Like today. And like this time a few weeks ago.

It’s chopped up and plomped on top of the Greek yogurt, on top of the lentils, on top of the sweet potatoes.

This dish is best with a bit of each component in every bite.

Lentils on Crispy Sweet Potatoes

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 2

Lentils on Crispy Sweet Potatoes

Ingredients

  • 1 sweet potato, cubed
  • 2 T olive oil
  • to taste salt
  • 1/8 t cayenne
  • 3/4 t coriander
  • 1/4 t ginger
  • 1/4 t pepper
  • 1 C red lentils
  • 2 C water
  • 1 t olive oil
  • 3 cloves garlic, chopped
  • 2 T balsamic vinegar
  • 1-2 t dijon mustard
  • to taste salt
  • pinch coriander
  • pinch ginger
  • Greek yogurt, for topping
  • cilantro, for topping

Instructions

  1. Pre-heat the oven to 350 F.
  2. Toss sweet potatoes through pepper. Spread out on a baking sheet and bake for 30 minutes (or until they're done on the inside), flipping once halfway through.
  3. Add lentils and water to a saucepan. Bring to a boil, then simmer for about 10 minutes, or until lentils are cooked to desired tenderness. Drain lentils and rinse. Set aside.
  4. Add 1 t olive oil to the lentil pan. Add garlic and cook for about 1 minute over medium-low. Add vinegar, mustard, salt, coriander, and ginger. Cook for 30 seconds. Add lentils and cook for 3-5 minutes. Taste and adjust seasoning if desired.
  5. Serve sweet potatoes topped with a scoop of lentils, a dollop of yogurt, and a sprinkle of cilantro.

Spring Rolls with Spicy Honey Mustard Dipping Sauce

Today, I was inspired to try something new. Something I’ve never attempted before.

Spring Rolls.

What a fun idea!

I felt like I was playing as I cut the avocado and veggies into matchsticks.

And then as I whisked the dip and the emulsion came together, I knew I was on to something. Because honey and mustard compliment each other so well, lemon adds a bright note, and Sriracha brings the spice.

I just followed the instructions on the back of the rice paper package, which instructed me to soak the paper in warm water for 5 seconds (if your package says something different, by all means, follow those instructions).

A few long sticks (or many short sticks, depending on the type of radish used) are added to the center of the paper.

Then the paper is folded in half, keeping the sticks in the center.

Sides are folded in towards each other, then it’s all rolled up.

I don’t know if this is how an expert would make these. But, it’s how I did it, and they worked just fine.

After rolling, slice in half on a bias (because it looks fancy).

You could totally switch up the dip, if you have a favorite Asian dip to use. You could just dip in wasabi and soy sauce too. You could also play with the contents of the rolls. I think that the following would be wonderful additions (maybe not all at the same time though):

– cucumber

– cilantro

– green onions

– bean sprouts

– sugar snap peas

– napa cabbage

– sesame seeds

– almonds

– tofu

– fried tempeh

– salmon

– shrimp

– crab

Obviously, the seafood would make these not vegan. Also, I’d cook any meat I was planning to use as I prefer it that way. If you don’t, and know how to safely prepare sashimi, then go for it.

I served these raw. I liked the crisp veggies in the sticky rice paper with the sweet and spicy dip. But, maybe next time I will try cooking the filling (not the avocado though) and then pan frying for a minute or two. Could be fun. Hmmm… maybe tomorrow.

Spring Rolls with Spicy Honey Mustard Dipping Sauce

Ingredients

  • Dip: 2 T lemon juice
  • 2 T dijon mustard
  • 1 T plus 1 t honey
  • 1 to 1 1/2 t Sriracha (or your favorite hot sauce)
  • 2 t soy sauce
  • to taste salt
  • 3 T olive oil
  • Rolls: 1 small ripe but firm avocado, julienned/cut into 4" matchsticks
  • 1/2 carrot, julienned/cut into 4" matchsticks
  • 2 celery ribs, julienned/cut into 4" matchsticks
  • 4 small radishes, julienned/cut into 1"-4" matchsticks
  • (Other options could include: cucumber, cilantro, green onions, bean sprouts, napa cabbage, sugar snap peas, sesame seeds, almonds, crab, shrimp, salmon, tofu, and fried tempeh.)
  • 10-15 pieces of rice paper
  • warm water

Instructions

  1. Whisk together lemon juice through soy sauce. While whisking, stream in olive oil. Taste and adjust quantities if needed.
  2. Follow rice paper package's instructions for soaking. (Should be around 5 seconds in warm water.) After soaking (one at a time), set on a plate and place about 4 pieces of each: avocado, carrot, celery, and radish (you may need more radishes if they are shorter pieces). Fold the paper in half, keeping the filling in the middle, fold the ends in towards each other, then roll it up. Slice in half.
  3. Serve with sauce for dipping.

Sautéed Persimmons with Bacon

Sometimes inspiration just hits. Something pops into my brain, like, “I wonder if spaghetti would taste good served in a roasted butternut squash” (we will find out at dinner tonight), or “persimmons and bacon… why haven’t I tried this before…”

I should have done this a long time ago. I mean, bacon pairs well with sweet things. The salty goodness compliments a hint of sweetness so nicely.

The recipe calls for 2-4 slices of bacon. Since I knew I’d be the only one eating this at lunch today, I just made two. Which was definitely just enough for one (barely, ’cause I hadn’t figured in pieces sneaked off the plate, testing to make sure this new brand of bacon was actually good, shoving whole pieces into my face…)

If possibly, peel persimmons in one long curly strip. Just because it’s fun. If you want to entice the kids to help, maybe they’d want to try this.

I like to cook these over a bit higher heat (just medium, rather than medium-low), so they get a bit more color.

Speaking of color, notice those tomatoes?! From my garden, finally!

After the persimmons are cooked, they’re tossed with all of the bacon (that you didn’t already eat), and some lemon juice, for brightness.

And just like that, you have a fabulous side.

You could eat it for breakfast alongside some Sweet and Savory Cornmeal Pancakes (hello double bacon!).

You could add some butter lettuce, almonds, and feta, and whisk up a lemon vinaigrette for a quick lunch.

Maybe you’d like to serve it alongside a roast chicken or pork, with a simple salad.

Want to change up your holiday dinner? Swap out your traditional sweet potato dish for these persimmons for an easy side.

Or, you might be like me, and just want to eat it on its own, picking out all the bacon for yourself.

Sautéed Persimmons with Bacon

Sautéed Persimmons with Bacon

Ingredients

  • 2-4 slices bacon
  • 1 t olive oil
  • 3-4 fuyu persimmons, peeled, sliced, and halved
  • pinch salt
  • pinch pepper
  • 1-2 T lemon juice

Instructions

  1. Place bacon in a cold skillet. Turn on heat and cook until crispy. Remove from pan and drain on a paper towel lined plate. Wipe out the pan (leaving a bit of grease is fine).
  2. Add olive oil to the pan. Add persimmons, salt, and pepper. Cook over medium heat, stirring occasionally, for 5-7 minutes, or until they are tender-crisp with nice color.
  3. Toss with bacon and lemon juice and serve immediately.
