Simple Pizza Friday

It’s the end of the work week. Are you tired? I am. And that’s ok. It was a busy week, but lots got done. Let’s celebrate that with a simple Pizza Friday meal.

All you’ll need are some tomatoes, red onion, mozzarella, and some herbs. Oh, and a pizza crust would be helpful here.

You can make your own, or buy a pre-made one at the store. I’ve done both. I like both. Mostly, I just like pizza.

I know people who make cheese. I’m not one of them. Are you? I want to be. Maybe someday. For now, I will enjoy Pizza on Fridays (or any day really) and be thankful that our grocery store is always stocked with plenty of mozzarella!

Tomato and Onion Pizza

A simple pizza is the perfect way to end the week.
Ingredients
  • 1 pizza crust
  • olive oil or AP flour for the baking sheet
  • 1/2 C (or more) tomato sauce
  • 1 t dried basil
  • 1/4 t dried thyme
  • 1/2 t dried oregano
  • 1/2 t dried parsley
  • 1/4 t dried rosemary, chopped
  • 1/4 t red pepper flakes
  • salt, to taste
  • pepper, to taste
  • 1 ball mozzarella cheese, sliced
  • 1-2 tomatoes, sliced
  • 1/2 red onion, sliced
  • 1 t dried or fresh savory
  • lemon wedges, for serving
Instructions
  1. Pre-heat oven to 425F.
  2. Dust baking sheet with flour or grease with oil. Roll out or press out pizza crust. Bake crust for 5 minutes.
  3. Stir together tomato sauce and seasonings (except savory). Taste and adjust if needed.
  4. Top crust with sauce, cheese, tomatoes, onion, and savory. Bake for 7-10 minutes (or according to your crust’s baking instructions).
  5. Serve with a squeeze of lemon.

All Star Menu

It’s baseball time. That and the summer fruits and veggies are two of the things I like most about summer (two of the most or two of the only?).

I grew up rooting for the Blue Jays. My brother and I jumped and cheered so hard when they won the World Series (I don’t remember if it was the first or the second one) that we knocked our VCR off the TV and it fell and made a dent in the wall.

I love baseball. It’s the only sport that I will sit down and watch. I know some find it boring. Not me.

My team is the Red Sox now. I will always be a bit of a Jays fan, but when we watched the Red Sox win the World Series over our 1st anniversary trip in 2007, we fell in love. And they became our team. Husband didn’t love baseball coming into our marriage. That was something that I brought. So it’s been something that we’ve grown to love to do together. We watch our team. We eat hot dogs and chili, we drink Blue Moon, we holler at the umps when they make terrible calls, we laugh at how much Don and Jerry laugh during their broadcast… We just love it. We hope to go to Fenway Park soon to see the Red Sox live… Hope hope hope…

In the meantime, we’ll watch at home. We’d watch every game if we could. And every year we look forward to the All Star Game. In part because it’s baseball, but also because it’s an excuse to have a themed dinner.

Crispy Potatoes with Chili and Cheese: Add already amazing Summer Chili to also amazing Crispy Potatoes and top with cheese and fresh tomatoes. Oh boy, did I do something right here or what?!

Bacon and Egg Burgers with Spicy Roasted Potato Salad: Bacon and egg on a burger is a good idea. Roasting potatoes and making them into a Potato Salad is amazing. Eating these together… mind blown!

Hot Diggity and Beans

BraisedBeans3We love themed dinners around here. Often on Saturdays we’ll have something basebally (that’s totally a word… right?) to eat while we watch the game. Since we’re usually watching from our living room, if we want a hot dog to eat, we’ve got to cook it ourselves.

The hot dogs that we eat come from Llano Seco Organic Pork. If I’m going to eat a hot dog, this is the one I’m gonna have! I think what I like the very best about them: I can pronounce all of the ingredients on the list (the first two being organic pork and organic beef) and there are no nitrites or nitrates added (“except for those occurring naturally in sea salt and celery powder”). Winner! (PS They also sell bacon. It is literally the best bacon I have ever had. Ever.)

Along with those hot dogs are some Braised Beans. They cook long enough to get a little creamy and so so so thick. Mmmm, better than you could get at the ballpark I think (although I’ll admit that there’s just something about that ballpark food that’s so yummy… we just won’t talk about what’s really in the nacho cheese, ok?!).

Ingredients
  • 2 C dried cranberry beans, soaked overnight and drained
  • 1 C green beans, chopped
  • 1/2 C daikon radish, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1 T honey
  • 2-3 C vegetable stock
  • 1/4 C tomato paste
  • pinch cayenne
  • pinch ginger
  • salt, to taste
  • pepper, to taste
  • 1 T molasses
  • 1 T balsamic vinegar
  • juice from 1 lemon
Instructions
  1. After beans have soaked overnight and been drained, cover with water and boil for 1 hour.
  2. Add all remaining ingredients except lemon juice. Bring back to a boil, then simmer for about 2 hours, or until beans are fully cooked.
  3. Add lemon juice.
  4. Taste and adjust seasoning if needed.
