Mom’s Potato Salad – With a Few Tweaks |

My Mom’s Potato Salad, with a few variations
Ingredients
- 1 1/2 lbs potatoes
- 3 hardboiled eggs
- 1 C mayo
- 1 C Greek yogurt
- 1 T dijon mustard
- 1 T white vinegar
- 1 T maple syrup
- 3/4 t salt
- dash paprika
- onion powder, to taste
- garlic powder, to taste
- 1/2 T fresh parsley, chopped
- 1 T chives, chopped
Instructions
- Steam potatoes. Cool.
- Whisk together dressing ingredients.
- Chop potatoes and eggs.
- Combine with dressing.
- Serve.
