Warm Beet Salad with Fruit and Nuts

It’s spring. It’s time for flip flops and tank tops, warm breezes and sunshine, and a change in fruits and veggies. But, before we get to all things spring, let’s compromise with winter a bit. Let’s ask her to stay a while longer before we rush in to summer.

I want to keep eating beets, oranges, and apples. But, I’m starting to crave salads and lighter foods. So, this dish is a happy medium.

Beets are sautéed in some olive oil with salt and pepper. Simple. They taste similar to the way they do when they’re roasted, with a little less crunch. But, they still retain that kinda crispy outside, tender inside quality that I love for food to take on.

Then the greens are added. I like the taste of beet greens. If you don’t have any on hand, kale, chard, or spinach would also work well.

After the greens are wilted down, all that’s left to do is drizzle everyone with a bit of dressing and add some toppings. Apples, oranges, nuts, and raisins were perfect. You can vary it depending on what’s in season and what you like. You could use fresh blackberries and grapefruit, or maybe some watermelon. You could use almonds, or switch them up for sunflower or pumpkin seeds.

I topped it with some ricotta and the dressing has honey. If you want to make this a vegan dish, you could try some silken tofu and sweeten things up with maple syrup instead of honey. Easy changes to make.

This one feels simple and light. Bright, but with depth. Perfect for a warm spring day.

Warm Beet Salad with Fruit and Nuts

Prep Time: 10 minutes

Cook Time: 13 minutes

Total Time: 23 minutes

Warm Beet Salad with Fruit and Nuts

Ingredients

  • 1 T olive oil
  • 2 beets, peeled and chopped
  • to taste salt
  • to taste pepper
  • 1 T lemon juice
  • 1 T balsamic vinegar
  • 1/2 t honey or maple syrup
  • to taste salt
  • to taste pepper
  • 1/4 to 1/2 t fresh parsley, chopped
  • 1 T olive oil
  • 1 bunch beet greens, de-stemmed and torn
  • 1/4 C orange, chopped
  • 1/4 C apple, chopped
  • 2 T almonds (or pumpkin seeds or sunflower seeds), chopped
  • 2 T raisins, chopped
  • 1/4 C ricotta (optional) (or silken tofu - sweetened, if desired)

Instructions

  1. Heat skillet, add olive oil, add beets, salt, and pepper. Cook over medium-low heat for about 10 minutes, or until the beets are tender, stirring occasionally. Add the greens and wilt down, about 3 minutes.
  2. Whisk lemon juice through parsley, stream in olive oil and whisk. Taste and adjust seasoning if needed.
  3. Top beets and greens with fruit, nuts/seeds, and raisins. Drizzle with dressing and top with ricotta/tofu.

Roasted Fennel and Asparagus with Mâche and Lemon Vinaigrette

For me, it’s not officially spring until we get asparagus in our Abundant Harvest Organics box. Guess this means that spring is here. I’ve planted my garden, baseball is back on with some spring training games, and the weather is pretty nice. It all adds up.

The asparagus that we got this week is that super delicate, thin stalked, first batch. They’re just lovely.

Especially when they’re tossed with some olive oil, salt, and pepper and roasted in a hot oven.

I’m not sure that fennel is a sign of spring, but roasted, just like most any veggie, it’s sure to be yummy.

To go with our spring theme, I have a bright and cheerful dressing that’s full of lemon, herbs, and delicious Bari olive oil. Right now I just can’t get enough of lemon and herbs. I want to eat it on everything. It’d be great with fish, to brighten most any roasted veggies (broccoli and cauliflower in the winter months, summer squash when it’s hot out, and even on hearty harvest veggies like winter squash in the fall), and as a great finish to soups.

I served the veggies a-top some bulgur wheat. If you want to keep it gluten-free, wild rice would be great too. Be sure to spoon some extra dressing over to let the bulgur wheat or rice get nice and coated. You could also serve it as a hot and cold salad to go alongside some Parmesan Risotto or Gnocchi.

We ate this outside, enjoying the sunshine and cool breeze. Tim, who is really into writers and Paris was reminded of absenthe, by the licorice notes in the fennel. He feels like this is a dish that Hemmingway would have eaten. Me, I just thought it tasted good, Hem or not.

Roasted Fennel and Asparagus with Mâche and Lemon Vinaigrette

Ingredients

  • 1 T olive oil
  • 1 fennel bulb, thinly sliced
  • 20 asparagus, ends snapped off
  • to taste salt
  • to taste pepper
  • 1/4 C lemon juice
  • 1 t dijon mustard
  • 1 t honey
  • 1 T parsley (or basil or tarragon), chopped
  • to taste salt
  • 1 T green garlic (or garlic or shallots), chopped
  • 3 T to 1/4 C olive oil
  • 1 pint (2 C) mâche
  • Pre-heat the oven to 425F.

Instructions

  1. Toss fennel and asparagus with olive oil, salt, and pepper. Place on a baking sheet and roast for 20 minutes, flipping once.
  2. While veggies roast, whisk lemon juice through green garlic. Stream in olive oil as you whisk. Taste and adjust seasoning if needed.
  3. Toss the mâche with the dressing and serve over the roasted veggies. (Great served on top of bulgur wheat, but would also be great over wild rice, or alongside some parmesan risotto or gnocchi.)

Roasted Carrots with Honey and Almonds

If these carrots had a story, I’d imagine that it would go something like this, “My grandmother used to tell us about life in the old country. Her father was a carrot farmer. They had good years, but there were the lean years too.

Her mother made the best ricotta. It was a favorite in their town. During those harder times they would trade their carrots and that ricotta for the almonds grown on the farm right next to theirs.

At the end of the summer, they would shake the trees and there was always so much dust in the air. But, it was worth it. When they tasted those almonds, combined with the sweet carrots, grown by her father’s hand, topped with the cool, silky ricotta, it felt like everything would be alright. There was a promise of better times in those simple ingredients.

As she tossed the carrots with some olive oil, salt and pepper, a far away look would come over her.

As she took her first bite, I knew that the taste was taking her back to a different time. Memories long forgotten were brought back with the sweet roasted flavor. It tasted like home.”

 Yes, I think that’s the kind of story these carrots would tell.

Roasted Carrots with Honey and Almonds

Prep Time: 10 minutes

Cook Time: 17 minutes

Total Time: 27 minutes

Yield: 2-4 as a side dish, 2 as a light main dish

Roasted Carrots with Honey and Almonds

Ingredients

  • 3 carrots, sliced into rounds (1/4" thick)
  • 1 T olive oil
  • to taste salt
  • to taste pepper
  • 1 clove garlic, minced
  • 2 T honey
  • 1/4 C (heaping) almonds, diced
  • 1/4 C ricotta cheese
  • lemon slices, for serving

Instructions

  1. Pre-heat the oven to 425F.
  2. Toss the carrots with the olive oil, salt, and pepper. Place on a baking sheet and roast for 10 minutes.
  3. Toss partially roasted carrots with garlic, honey, and almonds. Spread out on the baking sheet and return to the oven and roast for 5-7 minutes more.
  4. Serve topped with a scoop of ricotta and a squeeze of lemon.

Hearty Winter Salad with Dill Dressing

Very rarely do I want a break from soup when the weather is cold. But, every once in a while it’s ok to take a breather from a steaming bowl of goodness. And I really do love the crunch of raw veggies. I also like how different a salad looks in the winter, compared to summer.

This simple meal starts with some hardboiled eggs. If you’re not in the mood for eggs, you could use tuna as an alternative.

When I was cooking these eggs, I thought I’d try to do them a different way from the way that I always do it, the way that works every time. I’d seen it done differently on TV, or read about it on a blog, or someone said something at some point in life about a different way to hard boil an egg.

Always a sure sign that something will turn out splendidly.

I ended up with soft boiled (aka goopy not fully cooked) eggs. Not at all what I was hoping for. So I returned them to the pot and re-boiled them the way I’d always done it. The way my mom taught me.

They turned out perfectly.

Lesson learned.

Veggies that I had on hand to go with the eggs: broccoli and radish. You could also use beets, crispy potatoes, peas, carrots, cauliflower, or cabbage.

Since I’m still obsessed with dill, I made a creamy dill dressing. It’s mostly Greek yogurt, because I was almost out of mayo. But, I’m happy with how it turned out, so I wouldn’t change the recipe. But, if you like a little less tang, switch up the proportions to suit your tastes.

This salad was seriously filling, with chickpeas and eggs on there. I made it to go along with the Spaghetti Squash au Gratin that I’d made for lunch the same day, but didn’t end up eating it until dinner, since the Gratin was more filling than I’d expected. As a light dinner, it was perfect (for me anyways). (I keep hitting the caps lock key so it looks like I’m screaming half of each word at you. I must have a rogue pinky finger.) A small portion of each would go nicely together.

Winter Salad

Prep Time: 15 minutes

Yield: Serves 2-4

Winter Salad

Ingredients

  • 4 eggs, hard boiled and chopped (or you could use tuna)
  • 1/2 C Greek yogurt
  • 2 T mayo
  • to taste salt
  • 1 T balsamic vinegar
  • 1 T fresh dill, chopped
  • 1/4 C olive oil
  • greens (lettuce, kale, spinach, chard), torn
  • 1/2 C broccoli, chopped into small pieces
  • 1/4 C radish, very thinly sliced
  • (could also add: grated carrots, chopped cauliflower, shredded cabbage, peas, crispy potatoes, beet chips)
  • 1/4 C chick peas

Instructions

  1. Cook eggs.
  2. Whisk yogurt through dill. Whisk in olive oil. Taste and adjust seasoning if needed.
  3. Top greens with veggies, chick peas, hard boiled eggs, and dressing.

Creamy Cucumber and Tomato Salad

Creamy dreamy salad. Perfect for these last days of summer. The tomato is ripe and sweet, the cucumber crisp and cool, the dressing bright and herb-filled. It’s one of my favorite ways to eat salad.

A couple of months ago, I planted a sprig of mint in the dirt. No roots, just thought I’d try it and see if anything happened.

It grew.

I have more mint than I know what to do with. And I’m not complaining.

It adds a wonderful refreshing taste to this dish.

I’m also growing some parsley and basil in my garden. I can never have enough of these fresh herbs. When they come in our Abundant Harvest Organics box, sometimes they’re gone in a day (like when I made Basil Pesto). I love being able to step just outside the door and snip off whatever I need for a dish.

Those fresh herbs are the highlight to an easy dressing. I’ve also added some Greek yogurt, fresh onion and garlic (just a bit), some balsamic vinegar, and some olive oil for flavor. The herbs might be the star, but those flavors all go so well together.

Also, raw onion, I know… But, try it – it’s not too much, and when it’s minced and mixed in with all those other flavors, it’s not overpowering. If you don’t feel like braving onion breath, just leave it out, or use some chives. They’ll work just fine.

I thought I’d peel the cucumbers. Not a requirement. But, I thought it would be nice. It’s one of the few veggies that I do peel.

Tomatoes are sliced, not too thick, not too thin.

And just like that, dressing is drizzled over and you have a great side.

You could make double the dressing and save it so you can eat this salad every day. It could be used as a dip for carrots and celery, you could dip a Grilled Cheese into it, you could dip pretzels, crackers, or sesame sticks in it.

But, the best way to eat it, I think, is to use it on this salad, and to pair it with the Fish Wellingtons that I made the other week. I’d definitely suggest making both, then inviting a good friend over for lunch.

Ingredients
  • Dressing: 1/2 C Greek yogurt
  • 1 T fresh basil, chopped
  • 1 T fresh mint, chopped
  • 1 T fresh parsley, chopped
  • 1 T onion or shallot, minced
  • 1 clove garlic, minced
  • 2 T olive oil
  • to taste salt
  • to taste pepper
  • splash balsamic vinegar
  • Salad: 1-2 cucumber, peeled and sliced into rounds
  • 2-3 tomatoes, sliced into rounds
Instructions
  1. Whisk together dressing ingredients. Taste and adjust seasoning if needed.
  2. Place cucumber and tomato on plates, alternating slices of each. Top with dressing.
